Staple cereal crops provide the majority of nutrients to the world's population, and thus, can significantly impact human nutrition and health. Phenotypic and genetic diversity within a crop can be useful for biofortification and crop improvement, but quantitative phenotyping is needed to identify varieties with high or low concentrations of a nutrient of interest, and to identify alleles responsible for quantitative trait variation of the nutrient. The primary objective of this pilot study is to provide evidence that a budget-tailored culinary nutrition program is both appropriate and applicable to undergraduate food science students both in everyday life as well as their future health careers. Two validated programs were combined into one program in order to evaluate their combined effects: Cooking With a Chef and Cooking Matters at the Store. Research trials were conducted to evaluate the effects of different levels of dietary grain sorghum on broiler live performance, carcass yield and shank (leg) and breast skin coloring. Iso-caloric diets were formulated where sorghum replaced corn at rates of 0% (control), 20, 40, 60, 80 and 100% for a total of 6 diets. For each of the two trials, 1500 Cobb 500 male broiler chicks were randomly allocated to 60 pens with 25 birds per pen (10 pens/diet) and grown to 46 days for the first research trial and 41 days for the second. Dietitians are expected to deliver sound and scientifically objective advice to the general public, yet their personal beliefs and behaviors could influence delivery of nutrition care. Increased understanding of the personal attitudes and behaviors of dietitians concerning eating behavior and body image could help improve dietetic practice. Traditional nutrition education emphasizes cognitive eating, i.e., monitoring energy intake and comparing macronutrient intakes to the current acceptable ranges. Intuitive eating, however, promotes the release of cognitive eating in favor of greater attention to physiologic cues, or “body wisdom”. Background: Polycystic Ovarian Syndrome (PCOS) is an endocrine disorder, which if left untreated can lead to infertility and diabetes.

Objective: To determine whether women with PCOS who practice intuitive eating skills are more confident in sustaining healthy lifestyle changes.

Methods: A web-based survey was completed by 120 women with PCOS. Bivariate associations between the self-efficacy and intuitive eating scales was investigated using scatterplots, Pearson’s correlation coefficient, and a simple linear regression model. Ratings on the intuitive eating scale were dichotomized as high or low and self-efficacy ratings were compared.

The aims of this study were to characterize the gut, oral, and vaginal microbiotas of pregnant women with varying nutritional status and to determine if daily supplementation with probiotic yogurt containing Lactobacillus rhamnosus GR-1 and ground Moringa leaves, would ‘normalize’ the microbiota and improve pregnancy outcomes. For the latter, a clinical study was performed in Mwanza, Tanzania, in which consumption of yogurt for 88 ± 31 days, starting from the second trimester, did not result in excess weight gain, altered pregnancy outcomes or increased blood nutrient levels compared to an under-nourished group not taking the yogurt. Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk. All studies performed in this project used the data collected in the Utah Child and Family Health Study (UCFHS) and the Johns Hopkins International Cleft Consortium.

Even with continued reduction in prevalence, cigarette smoking is still the leading cause of preventable death in America. Little is known about amino acid (AA) requirements in horses despite muscle mass accretion being of importance to an athletic species. Isotope methods for determining AA requirements and whole-body protein synthesis (WBPS) had not been previously used in growing horses. The first study herein was the first to apply isotope methods to determine WBPS in growing horses. In the study, weanling colts received two different levels of crude protein. Whole-body protein kinetics indicated that WBPS was greater when the weanlings were fed the diet with a greater crude protein content (P<0.05). The second study sought to determine a lysine requirement for yearling horses using the indicator AA oxidation (IAAO) method. Despite using six dietary levels of lysine; three above and three below the current recommendation, no breakpoint could be determined. Phenylalanine kinetics were not affected by lysine level (P>0.05), but plasma lysine increased linearly with lysine intake …

This research examines student food insecurity at Bowling Green State University (BGSU) and available resources in Bowling Green, Ohio. Seven classes from BGSU’s main campus were randomly chosen to complete a survey regarding participant background information, details concerning food attainment, food security level, and use of community resources to allow for food acquisition. These classes included undergraduate classes and ranged from 15 to 272 students per class. Less than one quarter of student participants had food insecurity (19%), and food insecurity was significantly associated with financial dependence (P=0.04). Alzheimer’s disease (AD), the most common form of senile dementia, currently affects over 35 million people worldwide. While there is no cure or effective treatment, early intervention programs hold considerable promise. Following particular dietary patterns represents one potential intervention strategy accessible to all.

Results from previous studies investigating the association of diet, cognition and biomarkers of AD are inconsistent: Positive results have been reported (1-7), whilst others have shown no associations.
