Childhood overweight, obesity, and food insecurity are serious problems that are especially prevalent in low-income areas. Belmont Elementary School serves many children from low-income households (classified as a Title I school with 82.6% of students receiving free or reduced-price lunch) and, thus, was a perfect setting for the birth of an original nutrition curriculum.
A six-week after-school nutrition education program called “Mission Nutrition” was developed and implemented at Belmont Elementary School over the course of three and a half years. Humans have transformed much of the natural landscape and are continuing to do so at an accelerated rate, compromising natural areas that serve as important habitat for many species. Roads impact much of the environment as they fragment habitat and introduce traffic noise into the acoustic environment, deferentially affecting wildlife in roadside habitat. I explored how traffic noise affects the detection of birds based on whether their vocalizations were masked by traffic noise. Masked species detection was not affected by an increase in traffic noise amplitude, while there was a negative effect of traffic noise amplitude on unmasked species detection, …

With perceived student resistance to active learning in the classroom, instructors are hesitant to implement such methods into their classroom structure despite how effective they may be. This research seeks to understand student perceptions related to the transition to higher prevalence of active learning techniques. We aimed to find answers to how students perceive the ideal classroom to be structured, what reasons they perceive for lecture and active learning components, and possible explanations to concerns of groupwork during class time. Misunderstandings of the nature of science (NOS) contribute greatly to resistance to evolutionary theory especially among non-scientific audiences. Here we delineate three extended instructional examples that make extensive use of NOS to establish a foundation upon which to more successfully introduce evolution. Specifically, these instructional examples enable students to consider evolutionary biology using NOS as a lens for interpretation of evolutionary concepts. We have further found, through our respective research efforts and instructional experiences, that a deep understanding of NOS helps students understand and accept the scientific validity of evolution and, conversely, that evolution provides an especially effective context for …

Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.
Objective: Determine baseline SE and CF and the associations with dietary quality and body mass index (BMI) of youth enrolled in iCook 4H.
