In this study, sweetened black and green tea were utilized as substrate for kombucha fermentation. Linden, lemon balm, sage, echinacea, mint, and cinnamon infusions were added to kombucha to design a novel beverage with improved functional and organoleptic characteristics. After fermentation, the antioxidant capacity (AC) of the kombucha increased by 13.96% 2,2-diphenyl-1- picryl-hydrazyl-hydrate (DPPH), 48.90% ferric reducing antioxidant power (FRAP), and 55.54% cupric reducing AC (CUPRAC). Sustainable Approach To Produce Bioethanol From Karanja (Pongamia Pinnata) Oilseed Residue, Pooja Doshi, Gopal Srivastava

Agricultural biomass is the world's largest, most sustainable, and most promising renewable energy source. This study investigated the potential of Karanja (Pongamia pinnata) oilseed residual waste (defatted kernel, hull, and their mixture) as a source of ethanol. The pretreatment of the finely ground samples was carried out using dilute sulfuric acid (0.5%) hydrolysis at a higher temperature of 121 °C and 15 psi pressure for 90 min. The pretreatment usually removes the lignin and facilitates the hydrolysis of cellulose and hemicelluloses. They were further hydrolyzed using 5% H_2SO_4 at 50 °C for 70 h. This study was undertaken to investigate the antifungal effect of DL-limonene on yeasts using disk diffusion and the minimum inhibitory concentration (MIC). The effect of DL-limonene on ethyl alcohol fermentation by Saccharomyces cerevisiae was also investigated. According to disk diffusion results, the development of an inhibition zone was observed in all microorganisms tested. The inhibition zones were larger than those occurring with the Fungizone antibiotic used as the control. Inhibition zone diameters increased with increasing amounts of DL-limonene.
