Objective:The objective of this study was to determine palatability differences in beef strip loin steaks among various U.S. Department of Agriculture approved thawing methods and those commonly utilized by consumers.

Study Description:Paired Low Choice beef strip loins (n=15) were collected and fabricated into six sections, each section was fabricated into 1-in steaks and assigned one of six thawing methods including: countertop, cook from frozen, cold water, hot water, microwave, and refrigerator. Objective:To determine the least detrimental castration technique in terms of growth performance when castrating cattle upon entry to the feedlot.

Study Description:Intact bulls were sourced from the Southeastern U.S. and received at the Kansas State University Beef Stocker Unit. After backgrounding, 700-lb bulls were castrated using various techniques, including banding, banding with splitting of the distal scrotum, use of the Henderson Tool, and use of a burdizzo clamp. A group of intact bulls served as a negative control group. Weights were obtained at regular intervals throughout the 56-day study to quantify and compare growth performance.

Objective:Using beef strip loins steaks, evaluate six common thawing methods and assess the quality attributes through a trained panelist evaluation and an array of instrumental quality measures.

Study Description:Paired Low Choice strip loins (n = 15) were collected from a beef packing facility. The paired loins were fabricated into 1-in steaks and blocked into six blocks of four steaks. Objective:The objective of our experiment was to determine if prescribed fire applied in April, August, or October influenced stocker growth performance or plant community characteristics in the Kansas Flint Hills over a 6-year period.

Study Description:A total of 1,939 yearling stocker cattle were assigned to one of three prescribed-burn treatments: spring (April 11 ± 5.7 days), summer (August 25 ± 6.2 days or fall (October 2 ± 9.0 days) over a 5-year period. Objective:The objective of this study was to evaluate and determine thaw rate and time of strip steaks thawed using methods that are recommended by the U.S. Department of Agriculture and those commonly used by consumers.

Objective:This study was conducted to determine if supplemental methionine or choline improves health or growth performance in high-risk, newly received beef heifers.

Study Description:In a 3-year experiment, 1,440 beef heifers (480 per year; 493 lb initial weight; Tennessee origin) were received in 15 truckloads (five per year) in October of 2020, 2021, and 2022. Objective:Explore the effect of prescribed fire on tick population dynamics in the Kansas Flint Hills.

Study Description:Ticks were collected from spring (April), summer (August), or fall (September) burned pastures as well as control, unburned areas. Burning had been carried out for four consecutive years prior to this study. Tick populations were sampled every other week from March to August using material dragging and dry ice bait sampling methods. Tick species, sex, and life stage were identified morphologically and the total numbers for each burn treatment were calculated.

Objective:This study aimed to determine if the season of prescribed burning impacted dung beetle communities on pastures grazed by cattle in the Flint Hills.

Study Description:Dung beetle populations at the Kansas State University Beef Stocker unit were sampled biweekly for three months over the summer grazing period to determine if beetle populations varied between spring, summer, or fall burned pastures.

With so much misinformation presented in global media, it is difficult for consumers to distinguish what is true and what isn’t. Twenty-five students who participated in a study abroad course tailored to veterinary medicine during the summer of 2019 were the study’s sources of data. Using photovoice and phenomenology research methods, we sought to explore, understand, and interpret the impact of a study abroad course on pre-vet students’ views regarding veterinary medicine and their aspirations to become veterinarians. Students perceived that veterinary medicine in Mexico was structured differently from the U.S. approach and the nation’s socioeconomic and agroclimatology conditions impacted the delivery of veterinary care and affected the work settings and practice of veterinarians. Weaning is a stressful event for calves. Various management practices have been suggested to reduce weaning stress. The purpose of this study was to evaluate three different weaning management practices on calf gains at weaning. Eighty-eight bull and heifer calves were assigned to one of three weaning treatments at two research locations. The weaning management options were abrupt weaning, fence-line weaning, and use of a nose-flap weaning device. Calves were weighed at the start of the measurement period and then two weeks later after weaning was completed. Post-weaning diarrhea in pigs can be caused by the F4 or F18 strains of enterotoxigenicEscherichia coli(ETEC). To evaluate interventions for ETEC, experimental infection via a challenge model is critical. To our knowledge, there is a lack of explanation for the variability in responses observed across ETEC challenge studies. Our objective was to quantitatively summarize the responses and variability among recent ETEC challenge studies and develop a tool for sample size calculation. Two experiments were conducted to determine the effects of HiPhorius (DSM Nutritional Products, Parsippany, NJ) phytase on finishing pig growth performance, serum chemistry, bone mineralization, and carcass characteristics. In Exp. 1, 1,161 pigs (PIC 337 × 1050; initially 80.9. ± 1.06 lb) were used in a 105-d trial. There were 27 pigs per pen and 10 or 11 replications per treatment. Study Description:A total of 1,416 yearling stocker cattle were assigned to one of three prescribed-burn treatments: spring (April 9 ± 5.1 days), summer (August 23 ± 4.9 days), or fall (September 29 ± 8.7 days) over a 4-year period. Objective:The objective of this study was to evaluate the palatability traits and consumer acceptance of three plant-based ground beef alternatives in comparison to ground beef in a foodservice-like hamburger application.

Study Description:Three popular plant-based ground beef alternatives (GBA) and 80% lean, 20% fat composition ground beef chubs (n = 20) were selected for consumer analysis. To reduce the risk of transmission, an understanding of the virus distribution and mitigation strategies are needed. A total of 2,265 finishing pigs (337 × 1050 PIC; initially 110.7 ± 6.14 lb) were used in two 28-d trials to determine the effect of increasing energy or lysine in soybean meal-based diets on early and late finishing pig performance. Pigs were housed in mixed gender pens with 27 pigs per pen and 21 pens per treatment. Soybean meal (SBM) NE values used in diet formulation were either 946 kcal/lb (78% NE of corn; NRC) or 1,212 kcal/lb (100% NE of corn). Pigs from 64 commercial sites across 14 production systems in the Midwest US were used to evaluate the baseline biological measurements used to determine bone mineralization. Three pigs were selected from each commercial site representing: 1) a clinically normal pig (healthy); 2) a pig with evidence of clinical lameness (lame); and 3) a pig from a hospital pen that is assumed to have recent low feed intake (unhealthy). A total of 360 pigs (200 × 400 DNA) were used in a 43-d nursery trial (initially 12.4 ± 0.37 lb) to evaluate multiple strategies for allotting pigs to pens in swine research trials. At placement, the population was split into 3 cohorts with similar average weight and standard deviation. Each cohort was randomly assigned to 1 of 3 allotment strategies. A total of 300 pigs (241 × 600 DNA; initially 13.2 lb) were used to evaluate the effects of altering the dietary acid-binding capacity-4 (ABC-4) with specialty soy protein sources or acidifiers on nursery pig performance and fecal dry matter (DM).
