Optimization Of Preparation Technology And Structural Characterization Of Tilapia Scale Collagen Peptide Ferrous Chelate, Tang Shun-Bo, Tu Zong-Cai, Sha Xiao-Mei, Zhang Yao, Zhang Lu

Food and Machinery

The peptide ferrous chelate was prepared using tilapia scale collagen peptide and ferrous chloride salt as raw materials, and its optimal chelating conditions and chelate structure were investigated. Using chelate yield as an indicator, the chelation conditions were optimized by single factor and response surface methods; The structure and amino acid composition of the chelate were analyzed by scanning electron microscope, Fourier infrared spectroscopy, X-ray diffraction and amino acid analysis. The results showed that the optimal reaction conditions for preparing the chelate were pH 5.30, peptide concentration 3.00%, and peptide to iron mass ratio 3.2∶1.0. Under these conditions, the chelation …

Enzymatic Breaking-Extraction And Characterization Of Protein From Rape Bee Pollen, Wang Ling-Bo, Zhu Song, Chen Shang-Wei

Food and Machinery

The bee pollen of oilseed rape was used to investigate the effect of enzymatically breaking the wall for protein extraction, and the optimal conditions of the extraction were determined by single factor test and response surface analysis. After mixing 2.5

Antioxidant Capacity Of Placental Peptide From Tibetan Sheep And Its Structural Characterization, Ren Hai-Wei, Shi Ju-Fen, Wang Man-Qi, Fan Wen-Guang, Li Zhi-Zhong Apr 2020

Antioxidant Capacity Of Placental Peptide From Tibetan Sheep And Its Structural Characterization, Ren Hai-Wei, Shi Ju-Fen, Wang Man-Qi, Fan Wen-Guang, Li Zhi-Zhong

Food and Machinery

The free radical scavenging ability, metal ion chelation ability and reducing ability of different concentrations of placenta peptide from Tibetan sheep were determined, and the distribution of relative molecular weight, amino acid composition and structural characterization were also investigated to explain the causes of antioxidant capacity. The results showed that the antioxidant capacity of sheep placenta peptide was positively correlated with its concentration, and it had strong radical scavenging ability for DPPH· and ·OH with IC50 of 2.83 mg/mL and 0.94 mg/mL, respectively, which were comparable to BHT. In addition, the placenta peptide from Tibetan sheep also had certain …
