Changes In Tenderness And Collagen Of Beef Semitendinosus Muscle Heated At Two Rates, Marjorie Porter Penfield

Tenderness, an important quality attribute of meat, is affected by many factors, including rate of heating. The purpose of this investigation was to study the changes occurring in beef semitendinosus muscle and intramuscular connective tissue heated at rates comparable to oven roasting at 93 and 149°C. The sequence of changes occurring during heating was followed by evaluating samples heated to four end points, 40, 50, 60, and 70°C. Cores of meat and isolated connective tissue samples in buffer were heated in a water bath "programmed" to produce the desired rate of heating.

A simplified procedure for determination of myoglobin concentration in aqueous muscle extract was developed. The procedure was used in an investigation of possible interactions between phospholipids and bovine myoglobin, either isolated or as a component of sarcoplasmic proteins. Investigation of the possible interactions was carried out as follows. Solutions containing myoglobin or sarcoplasmic proteins and emulsions (phospholipid, sarcoplasmic protein-phospholipid, and myoglobin-phospholipid) were heated from 25°C to end point temperatures up to 77°C. The following measurements were made on all protein dispersions; (1) pH; (2) percent protein remaining dispersed; (3) myoglobin concentration; (4) available lysine, basic group and acidic group equivalents …

The rates of disappearance of 1,1-dimethyl-3-(a, a, a-trifluoro-m-toly1) urea (fluometuron) and the propylene glycol butyl either esters and a triethylamine salt of (2, 4, 5-trichlorophenoxy) acetic acid (2, 4, 5-T) from the application site in field plots and lysimeters were determined. Residual herbicide concentrations were estimated for field plot soil, runoff water collected in the plots after rainfall, and permanently impounded drainage water from the plots. Bioassays, spectrophotometry, and gas-liquid chromatography were utilized to detect residual concentrations of the three compounds. It has been noted that hematoxylin-eosin stained surface cells in the transitional epithelium of certain animals occasionally contain acidophilic inclusion bodies. These can be observed in monkey kidney pelvis, ureter, urinary bladder, and urethra. In one species of monkey, Macaca fascicularis, the inclusion bodies are quite prevalent and apparently are not related to any pathologic or experimental condition. They are highly refractile under the light microscope, a property which often indicates structures below the resolving power of the microscope. The major concern of this report is binder migration and the factors which play a major role contributing to its presence. The major factors studied were coatings using varied drying methods, adhesive levels, % solids and types of starches.
Results obtained show that to obtain minimal migration coatings should be dried evenly throughout using infrared sources of heat.
Coating with different adhesive levels will vary optical and strength properties. Binder migration is more evident when using lower adhesive levels.

Numerous works have been done on the investigation of coat weight variations by various researchers. The mechanism of the variation, in a given base stock, is explained by the two models - the hydrodynamic pressure which is a strong function of the web speed, and the visco-elastic or normal force. For a given coating color, viscosity is a function of the web speed which causes the shearing action to take place. Four 10-13 minute color video-tape cassettes were developed and used as a self instructional program. The cassettes were designed to reinforce the initial one-to-one therapeutic diet instruction which is routinely given by the hospital dietitian to maintenance hemodialysis patients. The tapes were shown to the subjects used in this study while they were receiving dialysis therapy in The University of Tennessee Artificial Kidney Center.
One cassette each was prepared pertaining to the dietary adjustments for protein, sodium and fluids, potassium and kilocalories. The content of the tapes was primarily directed to the needs of the educationally disadvantaged, thus obviating the …

Food preservation practices of Home Demonstration Club (HOC) and Expanded Foods and Nutrition Education Program (EFNEP) homemakers and environmental factors possibly influencing these practices were studied. An interview schedule was used.
As a combined sample, 96% of the HDC and EFNEP homemakers participated in some form of food preservation. The percentages of homemakers using the various methods of food preservation differed with over 50% canning, pickling, making jelly, and freezing.
Educational level, social participation score, and income were all higher for the HOC homemakers than the EFNEP women (P <0.01). Age of the homemaker and the number in the family were similar for the 2 groups.

Spores of Bacillus subtilis var. niger and Clostridium sporogenes were exposed to heat and radiation, separately, and in simultaneous combination. The spores were subjected to treatment under two sets of conditions. Wet spores were suspended in water during treatment, while spores in the dry state were treated in air which had a relative humidity of about 30% at room temperature. Treatment with ionizing radiation at room temperature was found to be more effective in the dry than the wet state, in contrast to most theories and some research in that area. The largest member of the tree dwelling North American squirrels is the Fox Squirrel (Sciurus niger Linnaeus). This species inhabits the eastern half of the contiguous United States. Its normal habitat is open woodland though the Fox Squirrel along with the Grey Squirrel (Sciurus carolinensis Linnaeus) may be found in some thickly wooded areas. The Fox Squirrel has extended its range farther west in response to the large number of trees that have been planted on the former prairie of the great plains (Yeager, 1959). Hair from small mammals of roadside, urban parkland, wilderness, and antique populations was analyzed for lead by atomic absorption spectrophotometry. Hair from roadside populations had a significantly greater amount of lead than hair from the ether groups. Hair from antique populations did not differ in lead content from that of current populations which are removed from immediate exposure to automotive exhausts.

It is the purpose of this study to determine whether the drug atropine has an effect on bacteria found normally inhabiting the human body, most specifically the gastrointestinal system. Atropine is one of the oldest drugs in medicine. It is derived from the roots and leaves of solanaceous plants such as henbane and Jimson weed. Atropine is often termed a belladonna alkaloid because it can also be found in the deadly nightshade plant, Atropa belladonna. Type conversion of a 12 acre plot of chamise chaparral to grassland in the Mud Flat region of the San Bernardino National Forest, San Gorgonio District, California, was completed in 1967.
The conversion was accomplished following standard type conversion techniques for chaparral in California and included retention of a mosaic pattern of islands of the original chaparral for the purpose of improving scenic quality and maximizing edge effect. The islands constituted approximately 9 per cent of the total 12 acres and averaged 3800 square feet per island with an average distance measurement between islands of 96 feet.

Arginase has been found to occur in the tentacles, gut, and body wall of Pista pacifica Berkeley. Partially purified arginase from the intestine has a molecular weight of 200,000, a Km of about 155 mM, an arginase/canavanase ratio of 22, a pH optimum of 10.5, and a temperature optimum of 60°C. In addition, P. pacifica arginase is competitively inhibited by ornithine but is not inhibited by high arginine concentrations, nor by sulfhydryl reagents. The enzyme is not stimulated by exogenous manganese and breaks down into an active subunit under harsh treatment. The subunit has a Km of about 118 mM …

This thesis is a report on the analysis of family data gathered to test the simple recessive hypothesis for the inability to taste phenyl-thio-urea (P.T.C.). The simple recessive hypothesis states that the inability of a minority of persons to taste high concentrations of P.T.C. is due to the action of an autosomal recessive gene in the homozygous condition.

Seventy-six ambulatory women with a mean age of 68 years participated in a 12-month study of the effects of fluoride, with and without multivitamin and calcium phosphate supplements, on nutritional status including bone density. Mean daily nutrient intakes calculated from 4- to 7-day weighed food intakes were 15 19 kcal including 15% from protein and 36% from fat; others were 797 mg calcium, 1000 mg phosphorus, and 8.6 mg iron. Mean intakes by 59 women who were not receiving vitamin supplements were 5800 IU of vitamin A and 35 mg of ascorbic acid. Mean blood hemoglobin was 13.9 g/100 ml; …

A sulfur-containing protein (S-protein) was proposed to be an intermediate in the sulfation of cellular constituents containing ester sulfate after it was observed that S-protein isolated from the particulate fraction of the cell was unaffected by avitaminosis E, the stress of malathion intoxication or the level of inorganic sulfate in the diet. The present investigation was undertaken in an attempt to identify the cellular role of the S-protein in sulfate utilization.

Responsibilities and time demands of the dietetic clinic staff within institutions containing dietetic internships were investigated. Information was obtained from a questionnaire and observation of the diet instruction time records at the Dietetic Clinic at The University of Tennessee Memorial Research Center and Hospital (UTMRCH). The sample consisted of 45 dietetic clinics whose directors returned the completed instrument.
The staffing patterns of the dietetic clinics varied widely. There was a broad range of educational levels, man-hours worked, and defined responsibilities in the department, institution and community of the personnel in the participating clinics. The effects of age and acid stress on bone and renal responses in rats were investigated. Albino, male weanling rats and male 10-month old retired breeder rats were maintained on a commercial laboratory chow until they were 4 months and 16 months of age, respectively, and then transferred to semi-synthetic experimental diets, containing either 500 mg or 100 mg calcium per 100 g diet, with or without 2% ammonium chloride as an acid stress. This study is the summation of the aerobic findings of a five-year longitudinal study designed to catalogue and define the "normal" flora of a conditioned baboon. Also, for comparison and evaluation, the findings of baboons captured and sampled in the "wild" in 1968 or shipped to the SFRE facilities during 1965 or from August of 1968 to December of 1971 are included.

The purpose of this study was to determine the significance of machine variables as they affect the scan average basis weight readings obtained from the Industrial Nucleonics basis weight gauge on the fourdrinier paper machine of the Department of Paper Science and Engineering at Western Michigan University. The variables used in this study were machine speed, machine chest and tray white water consistencies, tray white water flow, flow to the headbox, stock valve position and head on the stock valve.
