BACKGROUND: Adolescents who suffer an mTBI have an increased risk for neurological impairment and symptomology. Breastfeeding rates in America are lower than other high-income countries, with Mississippi having one of the lowest rates. A survey using the Iowa Infant Feeding Attitude Scale (IIFAS) was distributed twice to Mississippi State University students to understand their breastfeeding attitudes. Attitudes were determined by calculating a composite score and conducting statistical tests for significance. Knowledge between health and non-health related majors were explored by using five statements, and attitudes towards the statement “Breastmilk is the ideal food for babies” were compared across demographics. Food insecurity has long been a global challenge associated with negative health outcomes. The spectrum of food insecurity corresponds to a spectrum of negative health outcomes that range from kwashiorkor and marasmus to obesity and chronic disease. The burden of food insecurity is a stressor that additionally negatively effects mental health. In this study, the relationship between food insecurity and mental health was examined using data from the National Health and Nutrition Examination Survey (NHANES). Objective: The purpose of this study was to determine the effects of highlighting healthy food options on consumer food choices in a food bank setting.

Methods: Two community food banks participated in this study. One food bank served as the control, while a second food bank was rearranged so that fresh produce and other healthy products were the first options that shoppers encountered upon entering. After shopping, carts were inventoried for healthy vs non-healthy products. Entomopathogenic nematodes (EPNs) (genera Heterorhabditis and Steinernema) kill their invertebrate hosts with the aid of a mutualistic bacterium. The bacteria (Xenorhabdus spp. for steinernematids and Photorhabdus spp. for heterorhabditids) are primarily responsible for killing the host and providing the nematodes with nutrition and defense against secondary invaders. Photorhabdus is a Gram-negative bacterium in the Enterobacteriaceae family with high virulence towards their insect hosts. To achieve high mortality rates Photorhabdus produces a variety of virulence factors such as toxins, lipases, proteases, secretion systems, and fimbriae. Rationale: Diagnosis of autism has increased ten-fold in the last 40 years, and adults with autism remain an underrepresented population in research. Purpose: To qualitatively explore the relationship between eating behaviors and autism using a questionnaire and interviews with adults diagnosed with autism spectrum disorder. Methods: Four males aged 22-27 were interviewed with their mothers present and completed the Swedish Eating Assessment for Autism Spectrum Disorders (SWEAA). Interviews were analyzed through the process of open coding, and the questionnaires were analyzed to determine consistent findings between the interview and the SWEAA questionnaire. Background: Self-identity predicts healthy eating behaviors and intentions above and beyond Theory of Planned Behavior components (TPB; i.e., attitudes, perceived behavioral control, and subjective norms), but interventions exploring the relationship between self-identity and motivation are limited. Self-as-doer identity may be an important point of intervention for healthy eating behaviors (Houser-Marko & Sheldon, 2006). Therefore, I investigated whether the experimental manipulation of a self-as-doer identity predicted improved healthy food consumption, intentions, and increased self-identity as a healthy eater compared to women who received nutritional education or no intervention directly following the intervention and one month post-intervention.

Objective: The purpose of this study was to discover how college students conduct dinner groups and students' perceptions of the benefits and difficulties of participation.

Design: Qualitative study conducted with seven focus groups.

Setting: A university campus.

Participants: Thirty-six college students participating in dinner groups. Dinner groups were defined as a group of ≥3 people cooking for each other (or together) and eating together ≥4 times a week.

Analysis: The focus groups were recorded, transcribed, coded, and reconciled. NUDIST® NVivo software was used in identifying themes and subthemes.

Latter-day Saint (LDS) families with two parents and two children between the ages of 6-16 were recruited to participate in a weekly nutrition Family Home Evening (FHE) study and randomized into either a control group or an intervention group. Each family had to complete a nutrition screener prior to and after completing 6 weekly FHE lessons in the family's home environment. Online nutritional instruction was given to the intervention group for their FHE lessons, while the control group studied typical religious topics. Although work on the prolamins of pearl millet (Pennisetum glaucum) has revealed partial amino acid sequences for several alcohol-soluble storage proteins (Marcellino et al. 2002) the genes encoding them have not yet been isolated. We constructed a cDNA library from developing P. glaucum seed tissue and screened it using maize zein gene probes to isolate several α-prolamin-like gene sequences. The proteins encoded by these genes generally fall into two size classes: 20.6kD and 27.1kD, which we call the 21kD and 27kD pennisetins. The research determined the effects of consumption of small-animals on the diet and hemoglobin levels in school aged boys and girls. This study involved 311 indigenous children between 6 and 12 years of age. The concentrations of calcium and phosphorus were determined in 12 llamas from the Condoriri Agricultural Experiment Center (Oruro Technical University) of Oruro, Bolivia during two seasons (wet and dry) and at three ages (newborn, juvenile, and adult). Samples of flesh were taken from the arm, leg, back, rib, and neck. Pasture samples (grassland and prairie) were used to determine the rate of biting of each animal studied. The blood samples were taken by extracting blood from a jugular vein. The minerals (Ca and P) in the flesh are highest in the wet season, 113.78 mg/100 g. The newborns were found …

Objective: The purpose of this study was to discover whether the weight-related messages and themes from food advertisements in women's magazines reinforce or contradict the messages communicated in nutrition-related articles focusing on weight control within the same magazines.

Design: Content analysis of 48 issues of weight-related content six popular women's magazines, 2001-2002. There were three magazines in each of two categories, "homemaking" and "health." All food and nutrition advertisements were analyzed (n=954), along with all nutrition articles (n=336). With the objective to determine guinea pig digestibility of the nutritive components of Vicia villosa, red clover, and Lolium multiflorum in relation to alfalfa, the digestibility coefficients were evaluated for fiber, protein, dry matter, energy, and dry matter consumption in these three species in a completely random block design with four repetitions. The results showed that for alfalfa digestibility coefficients of 85.7% of the protein and 2806.6 kcal/kg of digestible energy, plus an economic substitution value (ESV) of fiber, protein, and energy of US$0.41 and $0.38/kg and US$0.009/1000 kcal, respectively. In Guatemala, nutritional problems are directly related to the difficulty to purchase food fit for human consumption due to low family incomes as well as low nutritional education. This situation motivated the realization of the present study whose main objective was to apply the dietary guidelines for Guatemala in three rural communities of Chiquimula. All three communities were previously aided by Benson Institute efforts to promote changes in eating behavior.
