An Audio-Tutorial Diet Instruction Program For The Educationally Disadvantaged Hemodialysis Patient, Virginia King Lawson

Four 10-13 minute color video-tape cassettes were developed and used as a self instructional program. The cassettes were designed to reinforce the initial one-to-one therapeutic diet instruction which is routinely given by the hospital dietitian to maintenance hemodialysis patients. The tapes were shown to the subjects used in this study while they were receiving dialysis therapy in The University of Tennessee Artificial Kidney Center.

One cassette each was prepared pertaining to the dietary adjustments for protein, sodium and fluids, potassium and kilocalories. The content of the tapes was primarily directed to the needs of the educationally disadvantaged, thus obviating the …

Food Preservation Practices Used By Selected Homemakers In Hancock County, Tennessee, Doris Ellen Phillips

Food preservation practices of Home Demonstration Club (HOC) and Expanded Foods and Nutrition Education Program (EFNEP) homemakers and environmental factors possibly influencing these practices were studied. An interview schedule was used.

As a combined sample, 96% of the HDC and EFNEP homemakers participated in some form of food preservation. The percentages of homemakers using the various methods of food preservation differed with over 50% canning, pickling, making jelly, and freezing.

Educational level, social participation score, and income were all higher for the HOC homemakers than the EFNEP women (P <0.01). Age of the homemaker and the number in the family were similar for the 2 groups.

This study was conducted on the Tennessee side of the Great Smoky Mountains National Park from the fall of 1971 to the spring of 1973. Seasonal food habits information of the European wild hog (Sus scrofa) was obtained by the analyses of stomach contents.

Hogs ate primarily plant material in all seasons. Grasses (Gramineae) were the most important food item in the spring. Grasses were important to hogs in the summer, as were the fruits of Gaylussacia sp., Vaccinium sp., and Malus sp. Roots were the major food item in the fall and winter months, although the mast …

The field experience was designed to provide an opportunity for the blending of academic knowledge with practical application in work situations.

An increased understanding of the total public health organization was achieved through conferences and interviews with public health professionals. This research was conducted to investigate food acceptability as affected by warm and cool fluorescent lights. Five food items were judged by college students on a cafeteria hot food line in Presidential Court Food Service at The University of Tennessee Knoxville. Choices of roast beef, hamburgers, green beans, mashed potatoes, and mixed vegetables held under cool and warm fluorescent lights were recorded.

All five foods lighted by a warm fluorescent tube were chosen in preference to the same foods lighted under a cool fluorescent light. The food preferences were significant at the 5% level between the two fluorescent lights when …

This thesis reports the findings of an ichthyofaunal survey of the Hatchie River system of northern Mississippi and southwestern Tennessee. This system represents the only drainage in that region which has not undergone large scale channelization, and it had previously been poorly collected. This survey was conducted mainly during August of 1972 with additional collections from other years also reported. Collections were made from the majority of streams in the entire drainage, and several methods were employed including seining, gill netting, trap nets, and the principal method, chemical application. The purpose of this study was to compare the perception and sensorimotor development of preschool children who used specific Montessori sensorial materials. Based on the literature, it was assumed that; 1. Because of the development and accentuation of form and tactile stimulation in the preschool child, extensive use of Montessori equipment designed in form for tactile and visual exploration and learning would influence development of visual perception. 2. Relationships among bone density, urinary hydroxyproline (HOP), and the metabolic balances of calcium, phosphorus, and nitrogen were investigated in 16 elderly women.

The subjects resided at Eastern State Psychiatric Hospital, Knoxville, Tennessee. They ranged in age from 68 to 82 years with a mean age of 74. The consent of each subject and that of her nearest relative or guardian and of the medical staff of the hospital was obtained before participation in the study was permitted.

Twenty-four-hour urine and fecal samples and food samples, including snacks, were collected over a 7-day period. Weighed food consumptions of each subject were …

The main objective of this study was to obtain information about trail users, primarily hikers, in the Great Smoky Mountains National Park (GSMNP), which would aid decision-makers in managing the wilderness resource for optimum benefits from hiking trails. I nformation was gathered by the use of a questionnaire to determine various socioeconomic characteristics of users, their motivations for hiking, and their attitudes toward trail use and management within the GSMNP.

Differences in phospholipid class distribution in raw and cooked meat and drip have been of interest to researchers at The University of Tennessee, Knoxville. The present research was performed to determine if such differences result from partitioning.

Drip lipid was found to have significantly higher cephalin content and lower lecithin content than raw or cooked biceps femoris muscle lipid. Correspondingly, cooked muscle lipid had significantly lower cephalin and higher lecithin content than raw muscle or drip lipids.
