Universal meal programs were created to mitigate childhood food insecurity in low-income communities. It is well known that poverty and food insecurity go hand-in-hand and are often the basis for much academic research within the realm of childhood food insecurity. This study investigates the impact of universal meal programs on food insecurity from a different perspective, that of the middle class. It was for this reason that the Biden-Harris Administration hosted the White House Conference on Hunger, Nutrition, and Health in September 2022. Food insecurity and malnutrition are significant public health concerns among older adults. Over the past two decades, the number of older adults in the U.S. who are food insecure has more than doubled (Ziliak & Gunderson, 2022). During the first year of the COVID-19 pandemic, deaths among older adults due to malnutrition increased in Minnesota (Olson, 2023). Food insecurity among older adults is associated with numerous health issues, isolation, and increased health costs (ACL, 2021).

Background. Students attending universities have higher rates of food insecurity than U.S. households. Most college campuses do not routinely screen students for food insecurity, which can affect students’ health and school performance. Currently, the university health clinic does not screen students for food insecurity. Purpose. To screen all students who present to the university clinic for food insecurity and evaluate students with food insecurity for malnutrition. Evidence. Foreman et al. Mississippi leads the United States in food insecurity, with 15.3% of Mississippians experiencing food insecurity in a given year. To determine the impacts of the COVID-19 pandemic on the food insecurity of Mississippians, a survey containing the USDA Household Food Security Questionnaire was distributed to adult Mississippi residents. By employing the USDA Household Food Security Scale and the Foster-Greer-Thorbecke Methodology, this study finds that the food insecurity rate, food insecurity gap, and squared food insecurity gap have worsened in Mississippi since the beginning of the COVID-19 pandemic. Cooperative Extension (Extension) can, and in many cases already does, engage in well-rooted partnerships with urban audiences. Yet, it is important to recognize that there are many layers to the diversity that exists within urban audiences– there is no single “urban community.” This article presents a case study of food security programming in New Brunswick, New Jersey, including collaborations between Rutgers Cooperative Extension and multiple community organizations to illustrate important considerations for engaging in urban Extension initiatives. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Unhealthy eating is a risk factor for food insecurity, so the project indirectly addresses the macro-level health problem that too many college students in California experience food …

The Vermont Foodbank, and community organizations statewide, have been working towards creating systems in which community members who receive produce have their cultural preferences taken into consideration. The Janet S. Munt Family Room, a non-profit organization that provides programs and services to parents and young children, is the leading distribution site for the Vermont Foodbank’s gleaning program. Every month, thousands of pounds of fresh, local vegetables are distributed at their programs. In Tanzania, half the population lives below the poverty line and suffers from food insecurity. Of the population, women and children primarily suffer from malnutrition due to food insecurity. For Tanzania, the problem is so severe that some women do not name their newborns for weeks or months due to their unlikely survival. This problem worsens for those who have a significant reliance on agriculture and live in the nation’s rural areas. Food-coping strategies (FCS) are often measured as direct indicators of food insecurity, as they allow for an assessment of the vulnerability and sustainability of attempts to maintain a sufficient food supply by limited-resource individuals. They are often easier to assess than other household indicators of sufficiency, including income and food consumption. Because vulnerability is considered, food-security policies and programs that account for FCS can broaden their efforts from addressing current constraints to food consumption, to include actions that also address future threats to food security. Through a survey conducted in 2020, we investigated changes in eating, shopping, and dietary behaviors of Maine adults by age group before COVID-19 (prior to March 2020) and during COVID-19 (August/September 2020). This investigation was part of a larger investigation to assess food security, access, and food systems during COVID-19.6 The survey was conducted in Maine between August and September 2020 and illustrates responses from a sample of 618 Maine adults aged 18 years and older. Findings include:

Weaknesses in the grades and standards system in low-income countries across Sub-Saharan Africa undermine the transparency of agricultural markets. Plants can sense the change of 1 oC in their growth environment and thus global climate change has a great impact on plant growth and development. The phenomenon that warm non-stress temperatures promote stem and petiole elongation, as well as leaf hyponastic growth, is collectively known as thermomorphogenesis. While it is known that the basic helix-loop-helix (bHLH) transcription factor PIF4 is highly inducible by temperature elevations and controls thermomorphogenesis in dicots (e.g., Arabidopsis thaliana), the molecular mechanism underlying thermomorphogenetic growth in monocots is not clear. The 2020 pandemic and economic crisis showcased the fragility of the American food system. In the months of quarantine and lockdowns, a growing number of Americans searched for ways to feed themselves and their families. Community-based and volunteer-supported feeding programs worked to bridge the divide between the hungry and their next meal. In many cases, these programs rely on an unpaid workforce and donations – of time, food, and facilities. Food insecurity (FI) is a socioeconomic condition characterized by inadequate access to enough food and nutrition to sustain health and wellbeing. Food insecurity is a risk factor for chronic and age-related conditions, raising concerns for the aging population of people living with HIV (PLWH), in whom food insecurity is disproportionately prevalent. PLWH are at increased risk of nutrition-related complications and chronic co-morbidities, thus food insecurity may exacerbate adverse health outcomes in this population. Objectives: To assess the relationship between chronic disease risk behaviors: tobacco usage, alcohol consumption, sedentary lifestyle, and food insecurity (FI) among Vermonters. Methods: This cross-sectional study uses a sample (n= 1,378) from Vermont’s 2018 Behavioral Risk Factor Surveillance System (BRFSS). The examined outcome is FI. The predictor measures were defined as at-risk tobacco use, alcohol consumption, and sedentary lifestyles.The following were established as covariates on the association between the dependent and independent variables: income, sex, age, race/ethnicity, and activity limitations. Results: In the unadjusted binomial logistic regression (Table 2), tobacco users were 3.32 times more likely to be food …
