Lipid carriers such as emulsions and liposomes have been widely studied as carriers for different nutraceuticals. However, lipid carriers' physicochemical instability results in the leakage of loaded nutraceuticals and the low solubility into the digestion medium, thus reducing the bioaccessibility. Cellulose nanocrystals (CNC) are nano-sized cellulose derivatives obtained after hydrolysis of cellulosic matrices that possess potential applications in functional foods and nutraceuticals. However, hydrophilicity, anionic surface potential, and poor re-dispersibility limit CNC’s applications. In species who consume folivorous diets, immature individuals must contend with the challenges of extracting nutrients from fibrous foods before dietary adaptations and strategies are fully developed. Additionally, immatures have distinct nutritional needs to support their stage-specific metabolic and biophysiological requirements. To meet these stage-specific needs, while constrained by underdeveloped feeding strategies and digestive capacities, immatures may adopt distinct diets better suited to their specific developmental context. Canada has reported poor diet quality and high rates of overweight and obesity among children. Obesity has been linked to several non-communicable diseases including type 2 diabetes, heart disease, and some forms of cancer. The prevalence of childhood obesity in the United States has more than tripled over the last four decades from 5 percent in 1978 to 18.5 percent in 2016, and according to the Mississippi Obesity Action Plan, 40.4% of Mississippi elementary school children (grades K-5) were either overweight or obese. Some reports have suggested that Mississippi’s overall obesity rate could reach 66.7% by 2030. The Healthy, Hunger-Free Kids Act of 2010 established national nutrition standards for school meals, these standards included mandates for whole grain serving requirements and sodium and flavored milk restrictions. In 2017, the U.S. Secretary of Agriculture relaxed the standards allowing schools to serve 1% flavored milk, half of grains offered as refined grains, and halted reduction of sodium standards. This study investigated perceptions of child nutrition program directors in Mississippi regarding these changes. Despite this, populations of moose in Colorado have continued to grow. Studying successful (i.e., persistent or growing) populations of moose can facilitate the continued conservation of the species by identifying habitat features critical for moose persistence.

The Sam Israel site is a precontact archaeological complex with numerous fish bones at the north end of Soap Lake, Washington. Excavated in 1976, the fish remains recovered from there were never fully analyzed prior to this research. Since this inland Columbia Plateau site had thousands of fish bones, it contained untapped potential for our understanding of ancient local fish procurement. Falls are a serious threat to older adults' quality of life. Evidence is lacking regarding the influence of diet on fall risk factors. This study aims to assess the relationship between diet, functional measures, and fall risk among older adults participating in a fall-prevention intervention. Cross-sectional analysis of baseline data from 192 participants with an average age of 70.9 years was conducted using Chi-square tests, t-test, Wilcoxon test, and nominal logistic analysis. Based on Dietary Screening Tool (DST) scores, 39.5% of participants were classified as nutritionally being “at-risk,” 46.1% were at “possible-risk,” and 14.4% were “not-at-risk.” Fall risk was assessed …
