Objective: There is little evidence of how fruit and vegetable (FV) household food availability changes over a one-month period among low-income households. The objective of this study was to analyze how FV variety and sustainability changes over a 4-week period.
Design: Inventories were conducted in low-income family households (n=49) once a week over a 4-week period. Trained researchers gathered the weights of all FV, including legumes, within the home. Previously determined mean container weights were subtracted to obtain the estimated weight of the FV. All weights were then converted to edible cups of FV, taking into account the weight that …

Planning, Implementation, And Formative Evaluation Of A Food Literacy Program, Heather M. Thomas

The overall purpose of this dissertation was to examine the planning, implementation, and formative evaluation of a community-based food literacy program for youth. Article 1 provided a summary of the community-based cooking program for at-risk youth. Objectives included the provision of applied food literacy and cooking skills education augmented with fieldtrips to local farms. Eight at-risk youth (five girls and three boys, mean age = 14.6) completed the intervention. Post intervention, five of eight participants completed in-depth interviews about their experiences.

In 2005, the Lowcountry Food Bank (LCFB) in Charleston, SC, launched an initiative to provide nutrition education to clients that seek food assistance. The agency directors of the 332 member agencies of the LCFB are in direct contact with clients, therefore they could provide nutrition education rather than the LCFB staff alone. As such, the self-efficacy of agency directors to deliver nutrition education must be measured. The objective of this project was to measure the self-efficacy of agency directors of the LCFB. Food-borne infections are a major source of mortality and morbidity. Salmonella causes the highest number of Food-borne bacterial infections in the US. This work contributes towards developing strategies to control Salmonella by (a) defining receptors used by Salmonella to adhere to and invade the host epithelium; (b) developing a host receptor based rapid detection method for the pathogen in food matrix; (C) and defining mechanisms of how probiotics can help alleviate Salmonella-induced cell death in the host epithelium.

The purpose of this study was to examine the effects of smoking on risk factors associated with cardiovascular disease (CVD) and determine the efficacy of antioxidant-rich berries in ameliorating these risk factors in postmenopausal smokers. Menopause and cigarette smoking have been identified as major risk factors for CVD due to a decrease in antioxidant protection, increase in inflammation and oxidative stress, and adverse changes in serum lipids. Antioxidants, specifically flavonoid compounds found in blackberries and blueberries, have been shown to prevent low-density lipoprotein cholesterol oxidation and thus prevent downstream inflammation and oxidative stress. Hydrolyzing food by-products is a unique approach to potentially increase by-product value and reduce waste. An abundant by-product of cheese production, whey, contains all essential amino acids and some distinctive peptides with functional and nutraceutical properties. Typically, proteins from whey are tailored for specific uses by chemical or enzymatic hydrolysis; however, subcritical water hydrolysis is a novel alternative used successfully to hydrolyze various substrates. Objective: To test differences on mean fruit and vegetable (FV) eaten, liking, preference, and self-efficacy scores among 3 modes of nutrition education intervention after a 3-week intervention.

Design: Convenience sample, pre- and post-test, quasi-experimental design.

Setting: Three elementary schools in a rural Eastern Tennessee County.

Participants: Participants were 160 3rd-5th graders.

The diets of Mongolia infants are deficient in vitamins and minerals and complementary foods are introduced too early. Breastfeeding is the best source of nutrition for infants until 6 months of age. A survey of 50 Mongolian mothers with children under the age of 5 in the town of Sainshand, Dornogobi, was conducted in July 2011. Mongolian infants are among the highest percent of infants in the world who are exclusively breastfed for the first 6 months of their lives, thus providing them with excellent nutrition. Maternal, Neonatal And Feeding Type Factors Associated With Severity Of Necrotizing Enterocolitis, Cheryl Ann Miner

Objective: To identify statistical associations with necrotizing enterocolitis (NEC) severity as dichotomized into cases with Bell stage II and III disease.
Study Design: We conducted a retrospective study using eight consecutive years of data from a multihospital healthcare system analyzed NEC severity (Bell stage II vs. III).
Results: We identified 220 neonates with stage ≥ II who had 225 separate episodes of NEC (157 stage II and 68 stage III). Those with stage III were born at earlier gestational age (P<0.0001) and lower birth weight (P<0.0001). Diagnosis of NEC occurred on about the same day of life in stage II and stage III cases. Those who developed stage III had significantly higher C-reactive protein (P<0.0001), I/T ratio (P= 0.0005), mean platelet volume (MPV) (P= 0.0001) and lower pH (P<0.0001) and platelet counts (P<0.0001). Transfusions were more common to those who progressed to stage III (P<0.0001). Regression analysis indicated higher odds of stage III in relationship to the volume of RBC transfusions (OR 2.41, {CI 1.85 to 3.11}, P<0.0001) and pasteurized human milk (PHM) (OR 1.32, {CI 1.07 to 1.62}, P = 0.0089). In contrast, feeding early mother's own milk (colostrum) for five days reduced the odds for stage III (OR 0.802, {CI 0.67 to 0.96}, P=0.0170). Those with small bowel resection were less likely to have received mother's own milk before NEC (OR 0.94, {CI 0.89 to 0.99}, P = 0.019) and factors predicting death from NEC were a low pH (OR 2.21, {CI 1.27 to 3.85}, P = 0.0005) and less colostrum (OR 0.96, {CI 0.94 to 0.99}, P = 0.003).

The Relationship Between Vitamin D And Calcium/Dairy Intake And Obesity In Children, Jason Barry

Objective: The aim of this study is to examine the relationship between vitamin D and calcium intake and obesity in a population of young adolescents who participated in a Vitamin D and Sunlight Exposure study in Pittsburgh, PA.

Participants: 252 healthy 6 to 14.9 year old young adolescents (54% male, 69% African American) were recruited between June 2006 and December 2009.

Main outcome measures: Weight status, BMI, vitamin D intake, calcium intake, vitamin D and calcium rich food intake.

Results: A significant difference by race was observed with 30.1% of African Americans and 8.5% of Caucasians being obese (P<0.01). No difference was found by gender. Median (25%, 75%) vitamin D intake in the total population was 254.9 IU (146.8, 407.3) which is below the level recommended by the Institute of Medicine. Median calcium intake in the total population was 1193.6 mg (752.8, 1161.1) which met recommended guidelines. Median vitamin D intake differed by weight status (normal, overweight, obese) in the total population (259.5 IU, 325.2 IU and 181.9 IU, respectively; P=0.015). A similar pattern was observed for calcium (1193.4 mg, 1416.3 mg and 911.6 mg, respectively; P=0.016). No correlation was found between vitamin D or calcium intake and BMI in the total population or by race and gender.

Improved weight loss interventions are needed to help reduce obesity. One dietary factor that has been effective in increasing weight loss is increased dietary structure. One method for increasing dietary structure is prescribing the frequency in which eating bouts (meals and snacks) occur. Eating frequency (EF) has been inversely related to body mass index (BMI) but the impact of EF on weight loss is unclear. Distress tolerance and experiential avoidance are important aspects of the coping process. In the current study, both were examined in relation to Body Mass Index and self-reported disturbances in mood and eating behavior. Distress tolerance was measured behaviorally and via self-report to elucidate the manner in which a) the ability to tolerate emotional distress, and b) the ability to persist behaviorally in the presence of stress-inducing stimuli were related to self-reported levels of depression, anxiety, maladaptive eating habits, and bodily concerns. A chronic low-grade inflammation occurring in white adipose tissue (WAT) is causally linked to the development of insulin resistance (IR), metabolic syndrome and obesity-associated chronic diseases. The nutritional status of children is declining as evidenced by the steady rise in childhood obesity rates over the last three decades. Consuming five servings of fruit and vegetables (FV) daily has shown to help with weight maintenance, but children are consuming far less than the recommended servings. This study was designed to test the efficacy of a sensory-focused multi-component school-based program at increasing vegetable intake among fifth-graders. Experiments were performed to investigate the effects of wash treatments, consisting of hot water, 2% lactic, 2% acetic, or 2% levulinic acid, for decontamination of pathogenic bacteria previously inoculated onto meat surfaces, to inhibit growth of pathogenic bacteria inoculated onto previously washed meat surfaces, and on the organoleptic quality of sliced turkey roll and beef trim. Acid washes were no more effective at reducing Escherichia coli O157:H7 on beef plate, Listeria monocytogenes on sliced turkey roll, and Salmonella on pork belly than was water wash. This study was conducted to compare and contrast potential aroma compounds in the headspace and small molecule metabolites produced as a result of starter culture metabolism in a full-fat and low-fat cheddar cheese model system. Low-fat Cheddar cheese flavor is different from full-fat Cheddar cheese and is not acceptable to many consumers. This 2-part experiment was designed to examine effects adjunct cultures have on low-fat Cheddar cheese flavor as determined through descriptive analysis and consumer feedback.

In Part 1, low-fat (5%) Cheddar cheese was produced in duplicate, using 6 combinations of DVS850, LH32, CR540, CRL431, Emfour, and CR319 bacterial cultures. This study used a qualitative research approach to examine the eating patterns, food purchasing and preparation skills and practices, barriers and facilitators of dietary change, social and contextual influences on food choices, and preferences for communication and presentation channels and styles of low-income rural African American adolescents. Mixed results, in terms of performance benefits, have been found when comparing carbohydrate (CHO) and carbohydrate-protein (CHO-P) supplementation during endurance exercise. Thus this study assessed performance from three different supplements (CHO-P, CHO, double carbohydrate [CHO-CHO]) as compared to a placebo (PLA) during a time trial (TT) run. Twelve male recreational runners (age = 32.4 ± 9.5 yrs; body mass index [BMI] = 22.7 ± 1.5 kg/m2; VO2max = 59.68 ± 7.53 mL/kg body weight; 100% white) individually completed four, 12-mile TT runs, 7-10 days apart, at about 75% of the their race pace. This study explored angiotensin IV’s (Ang IV) affects on the signaling pathways involved in the development of insulin resistance in 3T3-L1 adipocytes. Ang IV, working through the AT4 receptor, interferes with insulin signaling through the blockade of the phosphatidylinositol 3-kinases (PI3K)/Akt pathway and through activating mitogen activated protein kinases (MAPK): extracellular signal regulated kinase (ERK) and c-Jun-N-terminal kinase (JNK) which are known to impair insulin receptor substrate-1 (IRS-1) signaling. LIV-1, the estrogen-regulated gene encoding a member of the ZIP family of zinc transporters (SLC39A6), has been implicated in both growth and metastasis of estrogen-receptor (ER) positive (+) and negative (-) breast cancer cells. In ER+ breast cancer cells, LIV-1 expression is induced by both estrogen and insulin. In embryonic cells, LIV-1 has also been negatively associated with the expression of the cell adhesion protein, E-cadherin (CDH1), thought to play a role in metastasis. The overall goal was to understand the capabilities of a dairy based meat alternative. This was done in three phases: 1) the production of a dairy protein gel as a base for a dairy based meat alternative, 2) texturization of the dairy protein gel base to produce a nugget like texture, and 3) a consumer test to determine the acceptability of the dairy based nugget compared to meat and meat alternatives on the market.
