Adolescents living in the City of San Bernardino, California, are susceptible to health risks due to high rates of violence, suicide, teen pregnancy, and poverty, which place them among the most vulnerable in the Nation to disability, early death, unhealthy offspring, illiteracy, economic disadvantage, and chronic disease. This study analyzed data from the Youth Risk Behavior (YRBS) and local surveys conducted in the City’s Unified School District from 1999 through 2001. The rodent model is often used to study the impact of dietary n-3 fatty acids on a variety of biological endpoints, and the results of these studies have been used to explain anticipated effects of n-3 fatty acid intake in humans. However, supplemental levels of n-3 fatty acids that are commonly used in rodent studies do not represent reasonable human intake, by comparison. Objective The purposes of this study were two-fold: 1) to assess the school breakfast environment at four rural Appalachian schools for the contribution of foods to calories, fat, and fiber; and 2) to assess the dietary intake of students in these schools in relation to where breakfast was consumed (home, school, or both places) and by student weight status.

Setting Four rural Appalachian schools with fourth and fifth grade students in East Tennessee.

Subjects 255 fourth grade children completed a 24-hour dietary recall with a trained NDS-R interviewer and were weighed and measured by the Coordinated School Health Program.

The distinctive pathological marker of Parkinson’s Disease (PD) is the progressive death of neurons that produce dopamine; however, there are also major alterations in the production of quantities of other neurotransmitters, such as norepinephrine and serotonin that contribute to the signs, symptoms, neuropsychological manifestations of the diseases. The purpose of the study was to determine if nutrition knowledge would increase, indicated by improvements in pretest and posttest scores, following implementation of a nutrition lesson plan. The subjects included 532 fourth through eighth grade students from Johnson County, a rural county in northeast Tennessee. The lesson plans and pretests and posttests were developed to be appropriate for each grade level, with increased complexity in higher grades. The principal investigator graded the pretests and posttests and analyzed the data using SPSS. The results showed a significant improvement from pretests to posttests for all grades given a p-value of <0.05.

Dietary manganese affects the structure and integrity of blood vessels, as well as vessel predisposition to endothelial dysfunction and cardiovascular disease. In this thesis, we studied the role of manganese on the functional properties of rat aorta as defined by the endothelial and vascular smooth muscle cell pathways for adrenergic-mediated vasoconstriction and cholinergic-mediated vasodilation. Weanling Sprague-Dawley rats were fed a manganese deficient (MnD), adequate (MnA-control group) or supplemented (MnS) diet (<1, 10-15 and 45-50ppm Mn respectively). After 14 weeks on the diet the aorta was excised and four aortic rings of three mm length were prepared from each animal. Alterations in vasoconstriction among diet groups were detected by dose-response curves to the ^-adrenergic agonist LPhenylephrine in endothelium-intact and endothelium-disrupted rings. Alterations in endothelium-dependent vasodilation among diet groups were determined by doseresponse curves to Acetylcholine. We studied the mechanism by which dietary manganese affects two different endothelium-dependent vasodilation pathways: the Larginine/ nitric oxide (NO) and the cyclooxygenase (COX) pathways. Inhibition of the enzymes for NO synthesis (NOS) with L-NMMA, and of prostanoids (COX I and II) with Mefenamic acid, determination of NOS expression, and in vitro addition of L-Arginine (substrate for NO formation) to vessel rings revealed the effect of manganese on the regulation of endothelium-mediated vasodilation and vasoconstriction. Dose-response curves to sodium nitroprusside provided data for the dietary effect on endotheliumindependent vasodilation. Supplementary dietary manganese increased adrenoreceptor-mediated vascular smooth muscle contraction, which was significantly reduced in the presence of functional endothelium. Absence of dietary manganese increased endothelial cell sensitivity to the (Xi-adrenergic vasoconstrictor agent. Manganese had a small effect on the cGMP-pathway for dilation of vascular smooth muscle but affected vasodilation primarily through an endothelium-mediated pathway, probably by preserving NO bioavailability. Inhibition of vasodilation in Mn deficiency appears to occur through an endothelium-derived vasoconstrictor, possibly thromboxane with a concomitant decrease in the synthesis of endothelium-mediated vasodilator prostanoids. Our results demonstrate that dietary manganese influences the contractile machinery of vascular smooth muscle cells and regulates the bioactivity of endothelium-mediated vasodilators to affect agonist-induced signaling pathways that participate in the regulation of vasomotor tone. This suggests possibilities for dietary intervention in blood pressure regulation.

Objective: The purpose of this study was to determine if social desirability bias existed in dietary recall data of fourth graders and if bias was related to child’s weight status and gender. It was hypothesized that children concerned with social desirability would report decreased total energy intake, percent calories from fat, and servings per day of sugar- sweetened beverages, candies, desserts, and meats, while showing an increase in reported servings per day of vegetables.

Objectives: The purpose of this study was to identify the level of compliance to the Baby Friendly Hospital Initiative (BFHI) in hospitals in Tennessee, to identify differences in infant feeding policies and practices based on hospital ownership type and to identify if breastfeeding disparities are related to the infant feeding policies and practices of those hospitals.

Methods: Eighty hospitals/maternity centers were surveyed in Tennessee. Americans do not receive enough n-3 fatty acids (F. A.) in their diets. Walnuts are good source of α-linolenic acid (ALA), while n-3 F.A. enriched eggs provide a dietary source of DHA. Whether ALA and DHA have equivalent effects modifying cardiovascular risk factors is not known. This study compared the changes in blood and erythrocyte membrane lipids in twenty free-living lacto-ovo vegetarians following the consumption of regular eggs (6/wk), n-3 F.A. enriched eggs (6/wk), or walnuts (6 oz/wk) in a triple crossover design.

The purpose of this study was to determine if cardiac nutrition education can affect dietary patterns of subjects participating in Cardiac Rehabilitation. Surveys, a pretest given prior to the first cardiac class and a second identical test, administered following cardiac rehabilitation classes, were conducted. Fifty-five randomly selected participants from the outpatient Cardiac Rehabilitation Program were initially given the posttest. Thirty-three of the 55 surveys were returned. Cardiac health classes offered by various health professionals included cardiac nutrition education, group nutrition classes, guest lectures on nutrition, and cooking demonstrations. The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

The purpose of this research was to evaluate whether serum prealbumin levels would serve as a predictor of hospital length of stay for elderly orthopedic patients who underwent hip replacement surgery. The study consisted of a set of 54 patients admitted to a hospital in Bristol, Tennessee. Patients with depleted prealbumin levels, low to low/normal prealbumin levels, or normal prealbumin levels were analyzed. Data collected from a retrospective chart review included: age, length of stay, serum glucose, sodium, potassium, hematocrit, hemoglobin, BUN, creatinine, WBC, prealbumin, and post operative diet consumption. Desire to eat, hunger, feeling of having enough to eat, and fullness were measured in 11 eating disorder patients in treatment for less than two months, 7 eating disorder patients in treatment for more than two months, and 11 controls. The experimental group was female patients with a DSM-IV diagnosis of Anorexia Nervosa, Bulimia Nervosa, or eating disorder not-otherwise-specified. PURPOSE: A retrospective chart review was conducted to determine if nutritional source of feeding and/or infant age at diagnosis of cystic fibrosis had any effect on nutritional status and subsequent growth accretion. Studies have reported mixed results for people with or without diabetes with cognitive decline or Alzheimer's disease (AD). Cognitive decline and AD among people with diabetes will be the focus of much discussion since results have been controversial.

The study examined whether diabetes is associated with cognitive decline and whether it is an independent risk factor for the development of AD among elderly residents of Cache County, Utah.

Three Special Supplemental Food Program for Women Infants and Children (WIC) clinics participated in the study: the control clinic, a clinic which received the targeted curriculum, and a third clinic which received the targeted curriculum and referred participant families to the Expanded Food and Nutrition lll Education Program (EFNEP). Participants were followed for six months. Data collected included anthropometrics, dietary intake, and parental behaviors.

Suboptimal growth and nutritional status are problematic for children with cystic fibrosis (CF). Optimal nutrition predicts better lung function and longevity. Daily nutrition therapy for children with CF requires adequate food resources, knowledge of appropriate nutrition and behavior management skills, and confidence in one's ability to correctly apply the necessary skills. The Mountain West Cystic Fibrosis Consortium Questionnaire (MWCFC-Q) was designed as an educational needs assessment for parents of children with CF. The goal was to identify areas of concern that could be targeted for educational intervention to ultimately improve children's growth and nutritional status.

The aim of this study is to explore international students’ perceptions of food service at Montclair State University. Twelve international students were recruited to participate in this quick ethnography. Seven of the twelve participants were males and five were females. Students came from a variety of ethnic backgrounds including Asian/Pacific Islander, African, Hispanic and White, non-Hispanic. Inclusion criteria were that the students must be considered international students by the university and must be able to effectively communicate in English. OBJECTIVE: To review the recent medical literature on the effects of the DASH diet principles of increased fruits, vegetables, low-fat dairy, and decreased total and saturated fat; focusing on the intent to implement this dietary pattern to reduce hypertension, and thus to reduce cardiovascular disease.

FINDINGS: The combination diet reduced systolic by 5.5 mm Hg, and diastolic by 3.0 mm Hg as compared to the control diet (P<0.001 for each) (5, 7, 8). When comparing the two diet variables, the combination diet reduced systolic blood pressure 2.7 mm Hg, and diastolic 1.9 mm Hg more than the fruits-and-vegetables diet, (all with a P<0.001)! The results of the DASH-sodium (DASH II), proved also to substantially lower blood pressure when used with the combination diet.

CONCLUSION: Even though the DASH-sodium diet did decrease blood pressure, there is no scientific background to recommend this to all populations, and that instead of focusing attention on reducing sodium, efforts should …
