Connecting Culturally And Spiritually To Healthy Eating: A Community Assessment With Native Hawaiians, Mary Frances Oneha, Joan Dodgson, Mabel Ho`Oipo Decambra, Carol Titcomb, Rachelle Enos, Sandie Morimoto-Ching

Many of the chronic illnesses disproportionately experienced by Native Hawaiians are directly related to poor diets and long-standing obesity beginning in childhood. We report on the findings of in-depth key informant interviews (N = 14) that took place in two Native Hawaiian communities as part of a larger, community-based participatory research study that included a community assessment through individual interviews and focused group discussions, and a pilot intervention targeting pregnant women, their infants, and families. Four categories emerged from the qualitative analysis of interview transcripts that described an understanding of “healthy eating”: family roles and responsibilities, aspects of community …

Abstract

In recent years, consumer interest in locally or regionally produced foods has been growing. This study analyzed consumer attitudes and beliefs on local or regional livestock products in Florida. Data were collected from a convenience sample of 404 participants from counties in Florida. They were assessed by descriptive statistics, including chi-square tests. Most participants believed using chemicals in locally or regionally produced beef or goat meat was at minimum a somewhat serious hazard. Thus, many were willing to pay more for meat certified as locally or regionally produced. Moreover, most agreed or strongly agreed with statements on meat attributes. …

Vitamin K is known to play an essential role in the coagulation cascade; however, a growing body of research has found that a subtype of this vitamin, vitamin K2 (menaquinone) may have a beneficial effect in osteoporosis, cardiovascular disease, and cancer. This purpose of this article is to provide a comprehensive review of recent literature regarding menaquinone and its role in human health. This review discusses the physiology of menaquinone, its clinical benefits in cardiovascular disease, osteoporosis, and cancer, and how it may interact with certain medications. Type 1 and Type 2 diabetes are classified as a decrease in functional ß-cell mass, which results in impaired blood glucose regulation. Functional ß-cell mass is defined as the glucose stimulated insulin secretion rate multiplied by the total cellular mass which is determined by the proliferation and cell death rates. Though ß-cell mass proliferation rates generally decrease by adolescence, obesity and pregnancy have been shown to be times of significant ß-cell proliferation (1). Diabetes, a disease characterized by the inability of the body to maintain a normal blood glucose level, continues to affect the lives of many. In both Type I and Type II diabetes, eventual β-cell destruction results in decreased β-cell mass. Regeneration of functional β-cells and protection of such, could help reverse the effects of this disease and could possibly lead to a cure. Many studies have been done to increase functioning β-cell mass, but protecting regenerated β-cells from further apoptotic insults could greatly increase the effectiveness of β-cell transplants and other future treatments of the disease.


This Project Focused On The Effects Of Palmitate On Transcription Factors, Nr4a1 And Nr4a3. All Experiments Were Preformed On A Beta Cell Line. This project focused on the effects of palmitate on transcription factors, Nr4a1 and Nr4a3. All experiments were preformed on a beta cell line. The first experiment was done to show if palmitate effected proliferation of Nr4a1 and Nr4a3 knockout cell lines. This experiment was preformed adding .2 mmol palmitate to all cells and comparing them to untreated and treated unknocked down cell lines. This showed exactly what was expected which was that proliferation was decreased in Nr4a1 and Nr4a3 knockdown cell lines.

Type 1 and type 2 diabetes affects more than 9% of the American population and the incidences of diabetes continue to increase at a startling rate. Both Type 1 and Type 2 diabetes impede β- cell function (insulin secretion) by destroying β-cell mass. Increasing proliferation and function of β-cells could potentially be used as a cure for diabetes. Research has shown that the homeobox β-cell transcription factor Nkx6.1 induces β-cell proliferation. We have found that Nkx6.1 upregulates expression of HDAC1 and this project will allow us to further define the specific role of HDAC1 in increasing β-cell proliferation. We hypothesize …

Determining If C-Fos Regulates Glucose Stimulated Insulin, Benjamin Bitner, Jeffery Tessem

Increasing a patient’s functional β-cell mass may provide a cure for both types of diabetes. Previous studies have shown that overexpression of the homeodomain transcription factor Nkx6.1 stimulates β-cell proliferation, increases glucose stimulated insulin secretion (GSIS) and decreases apoptosis1. Functional β-cell mass is defined by the number of β-cells, which is dependent on proliferation and apoptosis rates, multiplied by the ability to secrete insulin. Increasing β-cell proliferation or insulin secretion while decreasing apoptosis could be used as a treatment to produce β-cells for islet transplantation, a potential cure for diabetes.

Modern Western societies seem to suffer from a veritable epidemic of serious diseases, two of the most serious of which are cardiovascular disease and cancer. In contrast, hunter and gatherer groups have a very low incidence of such diseases. Despite the diversity of hunter and gather diets, they all share the same characteristic: the absence of a Western diet. This suggests that there is something uniquely inflammatory about a Western diet, which is high in both fats and carbohydrates. Departures from a Western diet appear to result in better health. Artificial sweeteners are a widely used solution to this growing problem. Over 30% of adults in the U.S. are obese. A primary contributor to obesity is an unhealthy diet related to imbalanced macronutrients. Diets higher in protein (PRO) rather than carbohydrate (CHO) are associated with increased energy expenditure (EE) and reduced food intake. The objective of this pilot study was to determine if protein source at breakfast influences EE in young men (n = 4; ages 18-35). Participants consumed three isocaloric (whey (WP), pea (PP), beef (BP); 275 kcal, 62% PRO, 23% CHO, 15% Fat) drinks in a randomized, crossover design study with a one-week washout period (time between the administration …
