The purpose of this investigation was to measure energy expenditure and whole body carbohydrate and fat oxidation during shallow water exercise (SWE; submerged to axillary level). The level of energy expenditure and the relative contribution of fuels (e.g., carbohydrate [CHO], fat) depends on the intensity of exercise effort. This descriptive study addressed two questions: (1) what is the energy expenditure of performing SWE over a range of intensities; and (2) how does the rate of CHO and fat usage change with increasingly more demanding SWE efforts. The nutrient needs of spinal cord injury (SCI) athletes are dependent on their physiological alterations, training load, and intensity of practice. Limited research is available regarding the current nutrient intake of SCI elite athletes, possible nutrient deficiencies, and geographical consumption patterns. The purpose of this study was to examine the diets of Canadian (CAN), n=12, and American (USA), n=27, elite athletes with SCI from the United States Paralympic Canadian Sport Institute utilizing a self-reported 24-hour diet recall. Consuming recommended amounts of protein is vital to ensure adequate health and proper function of the body. Specific populations, such as vegans and vegetarians, may find consuming recommended amounts of protein from the diet challenging. Therefore, the addition of alternative sources of protein in baked goods was the primary focus in this study. Pea powder protein isolate, from the dry yellow pea, was utilized. A chief concern for female endurance athletes is adequate iron status which is partially determined by iron and vitamin C intake. This study examines the impact of diet on iron intake in adolescent female cross country runners. Animal-based iron sources are recognized as being better absorbed and more bioavailable than non-animal-based sources. Additionally, vitamin C promotes iron absorption. In this study, the independent variable was defined as a vegetarian diet (one excluding meat, fish, and poultry), with the control being a non-vegetarian diet. The purpose of the present study is to determine whether the circulating markers of iron status differ between vegetarian or non-vegetarian adolescent female high school cross-country runners. Fifteen non-vegetarian and six vegetarian female cross-country runners completed questionnaires used to obtain anthropometric data, health history, menstrual status, diet history and training history. Dietary intake was determined by self-report, using a food frequency questionnaire and a 3-day diet record. Blood samples were analyzed for serum iron, total iron binding capacity, serum ferritin, and transferrin saturation. No significant difference was found between vegetarians and non-vegetarians for serum iron or transferrin saturation. However, TIBC …

The relationship between school lunch quality and the Healthy Hunger Free Kids Act (HHFKA) revised nutrition standards was investigated. School Lunches from four Washington State elementary schools that earned HealthierUS School Challenge awards. Nutrition content of the meals selected and consumed was assessed using before and after digital photos. Meals were scored using the Healthy Eating Index (HEI) to determine meal quality. Results were based on 1033 lunches (509 pre-HHFKA in Spring 2012 and 524 in Spring 2013) and revealed improved HEI scores for most components post-HHFKA implementation school lunches both served and consumed. Trends in qualitative community nutrition research demonstrate a powerful, emerging perspective in the midst of a field historically dominated by quantitative methods of inquiry. For this qualitative study, ten key respondents were purposively selected and interviewed using the Community Readiness Model (CRM) to capture community knowledge of food insecurity issues and strategies. Data were analyzed using anchored rating scales, revealing readiness at a stage three, characterized by a vague awareness of local food insecurity.
