The role of a Registered Dietitian (RD) in long-term care facilities (LTCF) is to maintain the nutritional status of their patients by building appropriate diets, advocating for the patient with their doctors, ensuring proper caloric intake, and providing patient education on the relationship between a healthy diet and a healthy lifestyle (2022, RD Nutrition Consultants, LLC). Baking Without Gluten: Maximizing Nutrition Without Compromising Appeal, Callie Dunkerson

The purpose of the current study was to determine the appropriate adjustments needed to transform an ordinary muffin recipe into gluten-free (GF) muffins made with flaxseed meal (FM). Two batches of muffins were made, but all-purpose flour was replaced with FM, rice flour (RF), and xanthan gum in the experimental recipe. Participants conducted a sensory evaluation on both muffins. The GF muffin tasted similar to the control (C) but did not align with the C texture. The initial concept stemmed from an honors project collaboration. The project was a research paper on the evolution of El Salvador’s food culture. Topics discussed were El Salvador's food culture, focusing on the history, staple foods, food medicine, dietetics, and how the country has been impacted by the expansion of globalization. Additionally, the relationship between medical conditions and how dietitians respond to them are further explored. Globalization has negatively impacted El Salvador's health status, dietary practices, and ingrained poor habits that will be carried on for generations.

The purpose of this pilot study was to understand student awareness of food insecurities. Subjects for the study were students enrolled in a Foundations in Human Sciences course at a university located in East Texas (n=55). Students were asked to complete an online survey concerning knowledge of food insecurities, impacts of budgeting on food buying, previous personal food insecurity, skipped or had less nutritious meals due to the cost, and the food pantry on campus.

People following gluten free diets have become increasingly prevalent. Many people indicate that they feel better on a gluten free diet and that their symptoms return after eating gluten. This is occurring in the absence of celiac disease or a wheat allergy. This new clinical entity is called non-celiac gluten sensitivity (NCGS). This was accomplished by an initial assessment, a review and a post assessment.

Each interview period had a discussion time and nutrition information was disseminated. Each participant received a one on one mentoring with the researcher covering basic nutrition content of foods during each interview.

Green tea is highly effective in aiding in overall health if consumed on a daily basis and can reduce incidence of cardiovascular disease, obesity, type 2 diabetes, and certain types of cancer. The primary compounds found in green tea are polyphenols which include catechins, epicatechin(EC), epigallocatechin(EGC), epicatechingallate(ECG), andepigallocatechingallate(EGCG). Five research studies were analyzed to verify the validity of the hypothesis that green consumption is beneficial in overall health. In these studies, green tea was found to aid in weight loss with those who consumed green tea regularly, as well as having effects on thermogenesis and fat oxidation to control wait …
