Introduction: Assessing nutrition knowledge in four-year-olds, a developmental stage marked by limited attention spans and varying comprehension abilities, is challenging with traditional methods. A reliable test is pivotal for establishing a foundation for future health interventions. We evaluated a 13-question nutrition and healthy habits test in Pre-K4 children to assess reliability and sensitivity to detect differences.
Methods: Calculations included Cronbach's alpha, kappa coefficient, McNemar analysis by item, and Bland-Altman plots for test-retest differences. Mixed model regression assessed the questionnaire's sensitivity by sex and association with age. Background: During the transition from late adolescence to young adulthood, the brain requires adequate nutrients to properly develop and prevent psychiatric disorders. However, as teens transition from high school to college, a pattern of high calorie and sugar intake, irregular meals, and lack of consumption of fresh fruits and vegetables becomes predominant. Since college students are at a greater risk of developing mental health disorders compared to other age groups, it is of interest to study the factors that affect this population's mental health.

Global agriculture is beset by numerous challenges which must be surmounted to feed a developing world, from combating climate change to the cultivation of sustainable food products. It is estimated that over 370 million people worldwide suffer from diabetes, and this number is increasing rapidly. Normally, β-cells in the pancreas secrete insulin, which is necessary for proper glucose absorption and storage. Both Type 1 and Type 2 diabetes are characterized by decreased functional β-cell mass and insulin production, and increased circulating glucose and fatty acid levels. Diabetics’ pancreata maintain small amounts of functional β-cells, but these surviving cells are damaged and destroyed over time due to the harmful effects of hyperglycemia and hyperlipidemia. These β-cells must adapt to survive. Hence, diabetes is itself a selective process. We …

Research suggests that whole grain intake may decrease the risk of heart disease, type II diabetes, hypertension, obesity, and many types of cancer. The overall goal of this work is to increase the health status of an older adult population through comprehensive nutrition risk assessment and exposure to tailored nutrition education interventions. This project involved assisting in baseline and post-intervention assessment of the knowledge, attitude, and intake of whole grain foods within a convenience sample of fifty-eight older adults residing in low-income housing sites across Rhode Island.
