Cardiovascular disease (CVD) is the leading cause of death globally. CVDs affect the heart and blood vessels. The most prominent CVDs are coronary artery disease, cerebrovascular disease, rheumatic heart disease, and other conditions. More than four out of five CVD deaths are due to heart attacks and strokes.

The most important behavioral risk factors of heart disease and stroke are unhealthy diet and physical inactivity, but also include harmful abuse of tobacco and alcohol. These lifestyle factors display themselves as phenotypes like high blood pressure, high blood glucose and blood lipids, diabetes, and obesity. These risk factors, outside of genotype …

Divergent Selection For Water Conversion Ratio In Broiler Populations, Joseph Hiltz Dec 2021

Divergent Selection For Water Conversion Ratio In Broiler Populations, Joseph Hiltz

Graduate Theses and Dissertations

Water scarcity is a global reality and with the anticipated population growth, freshwater resources will be further strained to meet both human needs and agriculture applications. To ensure a water sustainable and food secure future, all aspects of agriculture must become more efficient. Two strategies were explored. The potential of improving water efficiency in broilers was examined. The first strategy was to develop a more efficient and accurate method for measuring water consumption/inputs in agriculture. To date, water measuring technology has lacked the necessary sophistication to assure accuracy and repeatability of low flow water usage.

After establishing a low flow …

Assessment Of Factors That Impact Hydration Status Of Professional And Collegiate Mascots, Caroline Atwell May 2019

Assessment Of Factors That Impact Hydration Status Of Professional And Collegiate Mascots, Caroline Atwell

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Mascots have unique physical demands and nutrition needs. They exert themselves tremendously on a variety of game days and at practices throughout the week. Hydration is as significant for mascots as it is for any other athlete, yet there is little to no known research available to help this population achieve a good hydration status. Studying similar populations such as cheerleaders, band members, football players, and firefighters provided a better understanding of mascot hydration. The purpose of this study was to examine the level of hydration knowledge in mascots performing at the collegiate and professional levels and determine the different …

Effects Of An Educational Intervention On Nutrition And Healthy Eating Habits In Minority Group Parents And Children Living In Arkansas, Peri Clay

The Eleanor Mann School of Nursing Undergraduate Honors Theses

Background: The Hispanic population is the largest growing minority ethnic group in the United States today. Minority groups have an added struggle with obesity and have higher rates of obesity in this country than the caucasian counterparts. While minority group parents want more for their children they face many cultural and language barriers related to proper nutrition and hydration. This prevents these families from gaining adequate nutrition.

Objective: The purpose was to evaluate the impact of nutrition education on obesity rates through implementation of a year long educational intervention for minority group mothers and their children through and …

Antiproliferative Activity Of Carotenoids, Phenolic Compounds, And Volatile Terpenoids In Carrots (Daucus Carota L.), Brittany Frederick May 2018

Antiproliferative Activity Of Carotenoids, Phenolic Compounds, And Volatile Terpenoids In Carrots (Daucus Carota L.), Brittany Frederick

Graduate Theses and Dissertations

Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. It is possible that carrot phenolics are responsible for this association, though this has not been widely accepted. Volatile terpenoids from carrots have not been studied in this regard. Therefore, the primary objective of this study was to compare the antiproliferative effects of carotenoids, phenolics, and volatile terpenoids extracted from carrots on Caco-2 colon cancer …
