Chinese restaurants' food safety problems have attracted the attention of food safety regulators. According to the many feedback of the state food safety inspectors, there are more problems in the operations of Chinese restaurants than in those others. The probability of repeating the same mistakes is also high in the review of the violation items in the inspection reports. Due to the number of violating behaviors in Chinese restaurants, food safety inspectors have to do many follow-up inspections, and this causes much waste of human resources.

Red sorghum contains phytochemicals such as 3-deoxyanthocyanidins and flavonoids with reported health benefits. The objective was to determine the chemical composition of sorghum phenolic extracts that were extracted with acidified methanol and separated into co-pigments and anthocyanin fraction by chromatographic procedure. In addition, the ability of sorghum extract to modify activation of the inflammasomes, a macromolecular protein complex involved in several malignancies, was evaluated. The total polyphenols, total flavonoids and total anthocyanins of the sorghum phenolic extract was quantified and phenolic profile was determined by high performance liquid chromatography. Celiac Disease is a hypersensitive response to gluten caused by HLA-DQ2 or HLA-DQ8 T-cell presentation, initiating destruction of intestinal epithelial cells. Studies indicate that an indigestible fragment of the gluten molecule, alpha-gliadin subcomponent 33-mer, rich in proline and glutamine, is responsible for the hypersensitivity response. Determination of 33 mer concentration in wheat lines would be beneficial to future development of wheat lines with reduced 33 mer concentration. Protein from wheat flour was extracted and subjected to western blot in order to quantify the concentration of 33-mer. The rates of food insecurity amongst Hoosier children is slightly above the national average. For many of these children, school lunches are their primary source of nutrition. During school breaks, these children are at risk of going hungry. While Purdue Nutrition Society wishes that we could help all Hoosier children stay fed with nutritious meals, for now we are focusing on helping 20 local elementary students most at risk of going hungry over spring break. Epidemiologic studies report associations between artificial sweetener (ASW) consumption and metabolic abnormalities, yet well-designed human intervention studies in humans are limited. Given that ASW contain no or few calories, one potential mechanism through which ASW may influence metabolic risk is through altering the gut microbiota. As alterations in the gut microbiota are known to be implicated in the development of metabolic disease, the purpose of this study was to investigate the effects of one week of three times daily diet soda (with ASW) consumption on the gut microbiota in healthy college students.
