Improve Food Safety Of Chinese Restaurants In Kansas Through Multicultural Intervening Measures, Shijun Yan, Autumn Schuck Oct 2016

Improve Food Safety Of Chinese Restaurants In Kansas Through Multicultural Intervening Measures, Shijun Yan, Autumn Schuck

Institute for Student Learning Assessment

Chinese restaurants' food safety problems have attracted the attention of food safety regulators. According to the many feedback of the state food safety inspectors, there are more problems in the operations of Chinese restaurants than in those others. The probability of repeating the same mistakes is also high in the review of the violation items in the inspection reports. Due to the number of violating behaviors in Chinese restaurants, food safety inspectors have to do many follow-up inspections, and this causes much waste of human resources.

The purpose of this study was to enable Chinese restaurant practitioners to understand US …

Coffee Powder Wettability, Flowability And Characterization Thereof, Natalia Atuesta, Afolawemi Afolabi, Teresa M. Carvajal

The Summer Undergraduate Research Fellowship (SURF) Symposium

The production efficiency and high-quality results in industrial processes usually rely on how well product characteristics are understood as well as how well processes are controlled in order to obtain specific results. Therefore, in a billion-dollar industry as is the case of the instant coffee market, understanding the properties of the compounds produced using different techniques is a very important tool to enhance performance and delivery of high-quality coffee powders. The aim of the present study is to provide a framework of some powder properties such as particle size, shape, diameter, circularity, convexity, aspect ratio and surface energy among others, …

Sorghum Phenolic Extracts: Chemical Characterization And Biological Activity Determination, James Jordan Bradwell Aug 2016

Sorghum Phenolic Extracts: Chemical Characterization And Biological Activity Determination, James Jordan Bradwell

EURēCA: Exhibition of Undergraduate Research and Creative Achievement

Red sorghum contains phytochemicals such as 3-deoxyanthocyanidins and flavonoids with reported health benefits. The objective was to determine the chemical composition of sorghum phenolic extracts that were extracted with acidified methanol and separated into co-pigments and anthocyanin fraction by chromatographic procedure. In addition, the ability of sorghum extract to modify activation of the inflammasomes, a macromolecular protein complex involved in several malignancies, was evaluated. The total polyphenols, total flavonoids and total anthocyanins of the sorghum phenolic extract was quantified and phenolic profile was determined by high performance liquid chromatography. The ability to modify the inflammasomes was evaluated using THP-1 human …

Dawn Or Doom: The Risks And Rewards Of Emerging Technologies, Diana Hancock, Steve Tally, Gerry Mccartney, Michele Arthur May 2016

Dawn Or Doom: The Risks And Rewards Of Emerging Technologies, Diana Hancock, Steve Tally, Gerry Mccartney, Michele Arthur

Purdue P-12 Networking Summit & Poster Session

Dawn or Doom is a free and open to the public conference at Purdue where we focus on benefits and risks surrounding some of the technologies that are both the most disruptive to current practices and being adopted the fastest. A collection of Purdue faculty experts and some outside speakers showcase their many perspectives related to this technology explosion, explore conditions that will foster innovation and investment into the next generation, and address the big-picture issues where both optimism and pessimism are warranted.

Genetic Diversity In Concentration Of A Protein Subcomponent In Selected Wheat Lines, Andrew B. Berman, Kelsey Gentry, Alexander K. Lee, Molly Yandrofski, Malorie Young, Robert L. Paris Apr 2016

Genetic Diversity In Concentration Of A Protein Subcomponent In Selected Wheat Lines, Andrew B. Berman, Kelsey Gentry, Alexander K. Lee, Molly Yandrofski, Malorie Young, Robert L. Paris

The Research and Scholarship Symposium (2013-2019)

Celiac Disease is a hypersensitive response to gluten caused by HLA-DQ2 or HLA-DQ8 T-cell presentation, initiating destruction of intestinal epithelial cells. Studies indicate that an indigestible fragment of the gluten molecule, alpha-gliadin subcomponent 33-mer, rich in proline and glutamine, is responsible for the hypersensitivity response. Determination of 33 mer concentration in wheat lines would be beneficial to future development of wheat lines with reduced 33 mer concentration. Protein from wheat flour was extracted and subjected to western blot in order to quantify the concentration of 33-mer. This will be a valuable tool for future research efforts focused on identification and …

Storage stability of Sorghum bicolor alcoholic extract as affected by pH and temperature

Jordan Bradwell, Philipus Pangloli, Vermont P Dia

Department of Food Science and Technology, University of Tennessee Institute of Agriculture, Knoxville TN

Red sorghum contains phytochemicals such as 3-deoxyanthocyanidins and flavonoids with potential application in food as coloring and health promoting agents. The objective was to determine the stability of methanolic and ethanolic extracts of sorghum as affected by pH (2, 4 and 6) and temperature of storage (4 and 22 °C). The following parameters were measured: polyphenol concentration, absorbance at 490 nm and L*, a* and b*-values …

The Archaeology Of Appetites, Molly S. Schonert Apr 2016

The Archaeology Of Appetites, Molly S. Schonert

SEWSA 2016 Intersectionality in the New Millennium: An Assessment of Culture, Power, and Society

Through use of examining how food is produced, stored, distributed and consumed, one can take a glimpse into the past, present and even future of this planet–to better understand the complexity of human identity and the social practices or roles that define an individual, community or society. So this begins an exploration of the archaeology of food as a gendered commodity throughout our evolutionary past, emphasizing the infinite ways in which foodway practices exceeds the nutritional value of what our ancestors, family, friends and ourselves consume(d) on a daily basis. Foodways practices is an invaluable tool in any archaeologists’ tool …

Hunger Doesn't Take A Spring Break, Jessica Isaacs Mar 2016

Hunger Doesn't Take A Spring Break, Jessica Isaacs

Engagement & Service-Learning Summit

The rates of food insecurity amongst Hoosier children is slightly above the national average. For many of these children, school lunches are their primary source of nutrition. During school breaks, these children are at risk of going hungry. While Purdue Nutrition Society wishes that we could help all Hoosier children stay fed with nutritious meals, for now we are focusing on helping 20 local elementary students most at risk of going hungry over spring break. Working with Glen Acres Elementary in Lafayette, Indiana, a school where in 2014, over 71% of the students qualified for free or reduced lunches, we …

Effects Of Three-Times Daily Diet Soda Consumption For One Week On The Composition Of The Gut Microbiome In Healthy Young Adults, Jenna Abdelhadi, Domenica Simone, Charles Hadley King, Raja Mazumder, Keith A. Crandall, Allison C. Sylvetsky-Meni Mar 2016

Sylvetsky-Meni

GW Research Days 2016 - 2020

Epidemiologic studies report associations between artificial sweetener (ASW) consumption and metabolic abnormalities, yet well-designed human intervention studies in humans are limited. Given that ASW contain no or few calories, one potential mechanism through which ASW may influence metabolic risk is through altering the gut microbiota. As alterations in the gut microbiota are known to be implicated in the development of metabolic disease, the purpose of this study was to investigate the effects of one week of three times daily diet soda (with ASW) consumption on the gut microbiota in healthy college students. We hypothesized that participants randomized to consume diet …
