Americans do not receive enough n-3 fatty acids (F. A.) in their diets. Walnuts are good source of α-linolenic acid (ALA), while n-3 F.A. enriched eggs provide a dietary source of DHA. Whether ALA and DHA have equivalent effects modifying cardiovascular risk factors is not known. This study compared the changes in blood and erythrocyte membrane lipids in twenty free-living lacto-ovo vegetarians following the consumption of regular eggs (6/wk), n-3 F.A. enriched eggs (6/wk), or walnuts (6 oz/wk) in a triple crossover design.

Food has long been recognized as a vehicle of disease transmission; there are more reported illness associated with the consumption of food than all other environmental factors combined. The handling and storage of food are potentially dangerous and demanding chores for those who may have the sensory losses associated with advancing age, fragile health, and limited resources.

Group-administered questionnaires on the knowledge, attitudes, and practices of food handling were given to 276 seniors, aged 55 to 90, from ten mobile home parks randomly selected from San Bernardino and Riverside counties. As an indicator of possible foodborne illness, the questionnaire asked …

Anticarcinogenic, Antitumor, And Antifungal Properties Of Allium Sativum (Garlic), Padma P. Tadi

In this study the antimutagenic/anticarcinogenic, immune enhancing, antitumor and antifungal effects of a crude extract and organosulfur compounds of garlic were determined. Diallyl sulfide (DAS), and ajoene each at 100 /xg/ml, and garlic extract (GE, 12.5 mg/ml) inhibited rat liver 9000 X g supernatant (S- 9) dependent mutagenesis in Salmonella typhimurium TA100 induced by either aflatoxin B1 (AFB^ or benzo[a]pyrene (B[a]P). The garlic compounds were shown to inhibit the binding of [3H]AFB1 to calf thymus DNA and the formation of specific AFB1-DNA adducts. It is desirable in any dietary service to produce high quality and nutritious food within reasonable cost. Any training which the food service supervisor may receive in administration, nutrition and food preparation will aid in achieving this goal. No training program for food service supervisors in Seventh-day Adventist institutions in Mexico has been available. The plan for a two week workshop for food service supervisors was thus developed as a step toward meeting this need.

Principles on techniques of conducting workshops have been discussed.

This study was done to develop a manual to be used in instructing food service supervisors in Brazil.

The need for the study was established when the writer was asked to direct a training course for food service supervisors in Brazil. Correspondence with dietitians in Brazil reveled that there was a definite need for a manual which presents current scientific, and technological information.

Current literature was reviewed and studied to determine present concepts in each of the areas of food service supervision and management. A manual of instruction was then prepared which included these concepts.
