Based on Raman scattering phenomenon, surface-enhanced Raman spectroscopy (SERS) detection technology enhances "fingerprint" information of tested substance by adsorbing it on the surface of SERS substrate to achieve trace detection. This review introduces the properties of chloramphenicol, the limit standards, and the hazards of residual chloramphenicol in animal-derived food products. Furthermore, it describes commonly used chloramphenicol detection methods. The characteristics of food supply chain and risks formation mechanism of key links of food safety based on the perspective of supply chain were reviewed, and the countermeasures of food risk management in the post-epidemic period was discussed. We proposed that strengthening the food safety risk management and establishing an information-sharing platform for food safety supply chain are urgent, and this will optimize the food safety organization and coordination mechanism, improving the food safety monitoring system.

Chlorate has become a concern in the food and beverage sector, related to chlorine sanitizers in industrial food production and water treatment. It is of particular concern to regulatory bodies due to the negative health effects of chlorate exposure. This study investigated the fate of chlorate in raw milk and isolated bacterial strains of interest responsible for chlorate breakdown. Unpasteurized milk was demonstrated to have a chlorate-reducing capacity, breaking down enriched chlorate to undetectable levels in 11 days. The system realizes the immersive experience during the drill. Our program aimed to increase knowledge related to fermented foods. Over 400 stakeholders registered for a webinar series that focused on defining fermented foods, health benefits of fermenting foods, and the safety of fermented foods. Participants indicated increases in knowledge and overall satisfaction with the content of the fermentation curriculum. The impact of the COVID-19 pandemic on the program outcomes are discussed.
