NUTR/GLST 498b: Global Research Experiences in Nutrition and Health

Introduction: Zambia is a multilingual country that uses 8 different languages for instruction including English and 7 other indigenous languages.

Methods: Survey research conducted between May-June 2022 on 6-7th graders within 9 Zambian schools. Classroom observations made and teachers interviewed.

Results: In Eastern and Southern Provinces, Zambian teachers speak an average of 5 languages while students speak an average of 2. Both teachers and students say English remains the most important language followed by first languages.

Conclusion: Continued research on language-in-education policies and impacts on student performance must be conducted if “One Zambia, One Nation” is meant to promote all …

As a science, agronomy is built upon the connection of inter-disciplinary fields of study. Management (M) of various discipline considerations (and their subsequent interactions) can be influenced by and have significant effects on genetic by environment (GxE) expression. This has led to the promotion of GxExM systems. However, optimizing GxExM programs requires extensive, interdisciplinary knowledge. To evaluate interdisciplinary training provided in undergraduate education, 11 four-year universities were selected in the United States that offer baccalaureate degree majors in agronomy or crop science. If an instructional environment that is conducive to learning generally requires the development of good student–teacher relationships, then a classroom atmosphere of trust is an especially important consideration when we engage students in the teaching and learning of evolution. Emotional scaffolding, therefore, is crucial to the successful teaching and learning of evolution. Quinlan (Coll Teach 64:101–111, 2016) refers to four key relationships necessary to construct this scaffolding—students with teachers being merely one of the four key relationships comprising a comprehensive emotional scaffolding—the others being students with subject matter, students with other students, and students with their developing selves. Misunderstandings of the nature of science (NOS) contribute greatly to resistance to evolutionary theory especially among non-scientific audiences. Here we delineate three extended instructional examples that make extensive use of NOS to establish a foundation upon which to more successfully introduce evolution. Specifically, these instructional examples enable students to consider evolutionary biology using NOS as a lens for interpretation of evolutionary concepts. We have further found, through our respective research efforts and instructional experiences, that a deep understanding of NOS helps students understand and accept the scientific validity of evolution and, conversely, that evolution provides an especially effective context for …

Journal writing was introduced as a means to assess student learning and acceptance of evolutionary science in a nonmajors’ biology course taught at a community college. Fourteen weeks of instruction were performed, each initiated by student-centered, in-class activities and culminated by a discussion, to elucidate tentative conclusions based on evidence from in-class activities. This experiment exposed third and fourth year undergraduates and graduate students taking a course in advanced food analysis to DNA extraction, polymerase chain reaction (PCR), and DNA sequence analysis. Students provided their own fish sample, purchased from local grocery stores, and the class as a whole extracted DNA, which was then subjected to PCR, gel electrophoresis and Sanger sequencing. Students retrieved their sequences and identified their fish using the NCBI BLAST nucleotide database. The recent AAAS call to improve undergraduate biology education suggested university instruction should focus on teaching core concepts like matter and energy, evolution, and systems and core competences like quantitative reasoning, modeling and integrating disciplines. My research has focused on how undergraduate biology students organize their knowledge of biological systems and how they reason about the myriad interactions and potential outcomes inherent to these systems. As part of an interdepartmental effort to attract promising young students to research at the interface between mathematics and biology, we created a course in which groups of recent high school graduates and first-year college students conducted a research project in insect population dynamics. The students set up experiments, collected data, used the data to develop mathematical models, tested their models against further experiments, and prepared their results for dissemination. The purpose of the study was to determine whether undergraduate students receiving web-based instruction based on traditional, key character, or classification instruction differed in their performance of insect identification tasks. All groups showed a significant improvement in insect identifications on pre- and post-two-dimensional picture specimen quizzes. The study also determined student performance on insect identification tasks was not as good as for family-level identification as compared to broader insect orders and arthropod classification identification tasks. Finally, students erred significantly more by misidentification than misspelling specimen names on prepared specimen quizzes. A case study was organized at Saratoga Elementary school in Lincoln, Nebraska to obtain data on what children desire in a garden space. To collect this data a school garden space was constructed and an after school garden club was implemented. Students who participated in the after school garden club partook in the study by drawing their ideal garden. Elements that the subjects drew were identified and categorized into ‘highly desired’ and ‘somewhat desired’.

These elements were then incorporated into a proposed garden design plan for Saratoga. The proposal plan uses Permaculture design methods to emphasize sustainability.

The goal of this study was to explore Christian biology-related majors’ perceptions of conflicts between evolution and their religious beliefs. This naturalistic study utilized a case study design of 15 undergraduate biology-related majors at or recent biology-related graduates from a mid-western Christian university. The broad sources of data were interviews, course documents, and observations. Outcomes indicate that most participants were raised to believe in creationism, but came to accept evolution through evaluating evidence for evolution, negotiating the literalness of Genesis, recognizing evolution as a non-salvation issue, and observing professors as Christian role models who accept evolution. The University of Nebraska-Lincoln and Nebraska public schools created Bugs in the Classroom, a professional development initiative with the goal of empowering teachers to use insects in science inquiry instruction in elementary classrooms. The initiative included workshops for elementary educators on science inquiry and teaching with insects. This paper includes a description of the workshop as well as an evaluation of the impact of the workshop on participating teachers' knowledge of scientific inquiry, entomology knowledge, and inquiry practice. Also included are recommendations for similar professional development activities.
