No information is currently available on the profile of producers and production process of dry-aged beef in Brazil, to the best of the authors’ knowledge. We surveyed 37 Brazilian companies that were producing dry-aged beef in 2020 to investigate this market. The absolute and relative frequency of responses was calculated to obtain the sum, average, minimum, and maximum values. From the respondents, dry-aged beef was first produced in 2009, and most producers are located in big cities. Senior horses (≥ 15 years) represent up to one-third of the global equine population, and the proportion of old horses (≥ 20 years) in the U.S. has been steadily increasing. Aging is associated with a loss of skeletal muscle mass in horses, and while age-related muscle loss is comparingly well characterized in humans, little is currently known concerning underlying mechanisms, adverse outcomes, or the prevalence of low muscle mass in senior horses. Aging infrastructure is prevalent throughout the world, but water control management structures, specifically dams, are of growing concern. Dams and their corresponding reservoirs have inherent, but separate, lifespans. The proportion of dams around the world that continue operation beyond their intended lifespans is growing at an alarming rate. Surface color of fresh beef is the major trait influencing consumers’ purchase decisions. Fresh beef color is determined by the myoglobin (Mb) redox stability. Post-translational modifications (PTMs) play a critical role in regulating Mb structure and functionality. This thesis focuses on the PTMs in Mb and their impact on fresh beef color stability.

Cardiovascular disease, rare in premenopausal women, increases sharply at menopause and is typically accompanied by chronic inflammation. Previous work in our laboratory demonstrated that replacing senescent ovaries in post-reproductive mice with young, actively cycling ovaries restored many health benefits, including decreased cardiomyopathy and restoration of immune function. Our objective here was to determine if depletion of germ cells from young transplanted ovaries would alter the ovarian-dependent extension of life and health span. Sixty-day-old germ cell-depleted and germ cell-containing ovaries were transplanted to post-reproductive, 17-month-old mice. Mean life span for female CBA/J mice is approximately 644 days. A changing microbiome has been linked to biological aging in mice and humans, suggesting a possible role of gut flora in pathogenic aging phenotypes. Many bat species have exceptional longevity given their body size and some can live up to ten times longer than expected with little signs of aging. This study explores the anal microbiome of the exceptionally long-lived Myotis myotis bat, investigating bacterial composition in both adult and juvenile bats to determine if the microbiome changes with age in a wild, long-lived non-model organism, using non-lethal sampling. The hamster is a useful model of human reproductive biology because its oocytes are similar to those in humans in terms of size and structural stability. In the present study we evaluated fecundity rate, ovarian follicular numbers, ova production, mitochondrial number, structure and function, and cytoplasmic lamellae (CL) in young (2–4 months) and old (12–18 months) Syrian hamsters (Mesocricetus auratus). Young hamsters had higher fertilisation rates and larger litters than old hamsters (100 vs 50% and 9.3 +/- 0.6 vs 5.5 +/- 0.6, respectively). Senior horses (≥20 years) exhibit inflamm-aging, or chronic, low-grade inflammation that occurs systemically with aging, similarly to humans. Inflamm-aging has previously been characterized in the horse in circulation as well as specifically being mediated by lymphocytes and monocytes. In humans, inflamm-aging has been associated with increased morbidity and mortality. However, in the horse, relatively little about inflamm-aging is known regarding clinical effects or factors influencing severity. Postmortem aging of steaks is a common practice used to improve tenderness of beef steaks. The impact of proteolysis and improvement in tenderness due to aging varies among muscles. When designing research protocols, samples for Warner-Bratzler shear force (WBSF) are often frozen for later analysis because of convenience and time limitations. Freezing stops postmortem aging and allows for storage until meat can be cooked for WBSF and/or sensory analysis. However freezing meat may cause damage to cell membranes resulting in lower Warner-Bratzler shear force (improved mechanical tenderness), lower water holding capacity, and greater moisture loss during cooking. Production Management Factors Affecting Inherent Beef Flavor: The Role Of Post-Weaning Forage, Energy Supplementation, Finishing Diets, And Aging Periods, Kimberly A. Varnold

Projects were conducted to determine effects of diet and aging periods on inherent beef flavor characteristics by relating biochemical constituents of meat, consumer acceptability, and lexicon flavor notes of two different muscles. Prediction equations were also created. Warm-season grasses caused increased concentrations of moisture, heme iron, and zinc in L. dorsi steaks. Aging 28 d instead of 7 d caused increased pH, carbohydrate, and heme and non-heme iron concentrations in B. femoris steaks. Warm-season grasses caused decreased concentrations in a majority of fatty acids, specifically when supplementation was not provided. Few differences were observed with cool-season grasses. Estradiol (Compudose®, COM) implants are extensively used in beef cattle production systems to alter body composition and feed efficiency. Little information exists about the physiological mechanisms affected by COM treatment in growing, mature, and senescent female cattle. Moreover, no reports describe the level of blood estradiol resulting from COM treatment. The blue crab, Callinectes sapidus, represents an ecologically and economically important component of marine and estuarine ecosystems. In Florida, blue crab landings accounted for $9.6 million dollars during the 2010 fishing season. Accurate stock assessments for this valuable fishery are essential. Age is a critical biological component of accurate stock assessments; however, blue crabs and other crustaceans are especially difficult to age because of the complex nature of discrete growth. Aged dogs exhibit a spectrum of cognitive abilities including a syndrome similar to Alzheimer's disease. A major impediment to research so far has been the lack of a quick and accurate test of visuospatial memory appropriate for community-based animals. We therefore report on the development and validation of the Canine Sand Maze. A 4.5-m-diameter circular pool was filled with a sand and powdered food reward mix to a depth of 10 cm. In the present investigation we compare the expression, basal activation and the ability of muscle stretch to activate the p70S6k pathway in the fast-twitch extensor digitorum longus (EDL) and slow-twitch soleus of adult (6 mo. old), aged (30 mo. old) and very aged (36 mo. old) Fischer 344 x Brown Norway rats. Immunoblotting demonstrated that the tissue content of mTOR, p70S6k, 4E-BP1 and GSK-3β decreased in the EDL and soleus in aged rats, while SHP-2 increased in the EDL and decreased in the soleus when compared to adult rats. The objective of this study was to compare fresh and frozen protocol procedures for Warner- Bratzler shear force (WBSF) determination on steaks aged for different periods of time. The fresh protocol consisted of measuring WBSF on steaks cooked on the exact day the aging period ended. The frozen protocol consisted of measuring WBSF on steaks that were aged, frozen (−16°C) for approximately 2 mo, thawed for 24 h, and then cooked. The objective was to determine whether increased dietary protein would enhance mammary development in prepubertal heifers fed for rapid body growth (1.2 kg/d). Fifty-four Holstein heifers (weighing approximately 134 kg) were assigned to one of three treatments. Heifers were fed a total mixed ration with metabolizable energy at 2.85 Mcal/kg and metabolizable protein at low, standard, or high concentrations (37, 41, or 44 g/Mcal of metabolizable energy, respectively) from 3.5 mo of age until slaughter at approximately 46 d after puberty. Heifers fed low, standard, and high protein gained 1130, 1170, and 1180 g/d, respectively. Dietary protein did not affect …

The changes in glycogen levels depending on starvation, feeding, aging and parasitisation in the mature female of Pimpla turionellae L. (Hymenoptera: Ichneumonidae), which is a biological control agent, have been observed. Glycogen level, which is a major energy source in insects, increased when the females of P.turionellae are fed with 30% honey, but it decreased depending on aging, starvation and parasitism. There was a positive relationship between the glycogen level of an insect and the number of its eggs laid within the host pupae.
