To continue the series that began in 1994, the National Beef Quality Audit (NBQA) – 2016 was conducted to quantify the quality status of the market cow and bull beef sector, as well as determine improvements made in the beef and dairy industry since 2007. The NBQA-2016 was conducted from March through December of 2016, and assessed hide-on carcasses (n = 5,278), chilled carcasses (n = 4,285), heads (n = 5,720), and offal items (n = 4,800) in 18 commercial processing facilities throughout the United States. The National Beef Quality Audit-2016 (NBQA-2016) was conducted to assess current transportation, mobility, and quality characteristics of U.S. fed steers and heifers. Data were collected at 17 beef processing facilities between March and November 2016. About 8,000 live cattle were evaluated for transportation and mobility, and about 25,000 carcasses were evaluated on the slaughter floor. Cattle were in transit to the slaughter facility for a mean duration of 2.7 h from a mean distance of 218.5 km using trailers with dimensions ranging from 17.84 m2 to 59.09 m2. Market lambs from the state fair of Virginia (n = 172) were ultrasonically evaluated by 4 scan technicians and 3 image interpreters to determine accuracy of ultrasonic estimates of loin muscle area (ULMA), backfat thickness (UBF), and body wall thickness (UBW). Lambs were initially scanned at the preferred magnification setting of each technician; 2 chose 1.5× and 2 chose 2.0×. Lambs were then scanned a second time for ULMA and UBF with machine magnification settings changed from 1.5 to 2.0×, or vice versa, midway through the second scan. A 3-yr experiment was conducted with cows and their calves to evaluate resource inputs, animal performance, and carcass characteristics of two production systems. In the control system, cows (CON; n = 99/yr) grazed pasture and were fed hay during the winter, and CON steer calves were finished in the feedlot for 211 d after weaning. In the treatment system (TRT; n = 100/yr), cows grazed pasture and crop residue during the winter and were fed hay. Treatment steer calves grazed crop residue after weaning, grazed pasture in the spring and summer, and were finished in the feedlot for 90 d. …

The objective of this study was to compare growth and carcass traits of 1,252 progeny of six commercially available dam lines included in the National Pork Producers Council Maternal Line Evaluation Project. Lines compared included one maternal line supplied by each of American Diamond Swine Genetics (ADSG), Danbred NA (DB), two lines supplied by Monsanto Choice Genetics (DK and GPK347), Newsham Hybrids (NH), and Landrace × Large White females supplied by the National Swine Registry (NSR). Our objective was to estimate responses in growth and carcass traits in the NE Index line (I) that was selected for 19 generations for increased litter size. Differences between Line I and the randomly selected control line (C) were estimated in pure line litters and in F1 and three-way cross litters produced by mating I and C females with males of unrelated lines. Contrasts of means were used to estimate the genetic difference between I and C and interactions of line differences with mating type. An experiment involving crosses among selection and control lines was conducted to partition direct and maternal additive genetic response to 20 yr of selection for 1) weaning weight, 2) yearling weight, and 3) index of yearling weight and muscle score. Selection response was evaluated for efficiency of gain, growth from birth through market weight, and carcass characteristics. Heritability and genetic correlations among traits were estimated using animal model analyses. Over a time-constant interval, selected lines were heavier, gained more weight, consumed more ME, and had more gain/ME than the control. Crossbred growing-finishing pigs (112 barrows, 48 gilts) were used to determine the effect of reducing excess dietary arginine, through feedstuff variation, on performance, carcass composition and plasma amino acid concentrations. Diets contained five, four, three or two times the NRC requirement for arginine. Lysine in all diets was formulated to be equal to NRC requirements, and all diets contained at least 100% of the NRC recommendations for all other essential amino acids.

Two hundred barrows and gilts were slaughtered at 100, 113 and 127 kg live weight. The sample was comprised of 36 litters, of which six litters within each breed of sire (Duroc, Hampshire and Yorkshire) were classified as fat litters (2.36 cm) and six litters classified as lean litters (2.16 cm) on the basis of litter mean backfat probes taken at 68 kg live weight.

Composition and quality characteristics of 1,121 steer carcasses obtained after mating Hereford and Angus cows to Hereford, Angus, Jersey, South Devon, Limousin, Charolais and Simmental sires were compared at a (1) constant age, (2) constant weight, and (3) constant percentage of fat in the longissimus muscle. Taste panel evaluation was made on a subsample of 496 carcasses. Growth rate of retail product, fat trim and bone differed significantly among sire breed groups. Breed group differences in relative proportions of retail product, fat trim and bone were largest when compared at a constant carcass weight and smallest when compared at equal …
