Grass-finished beef (GFB) can provide beneficial bioactive compounds to healthy diets, including omega-3 polyunsaturated fatty acids (n-3 PUFAs), conjugated linoleic acid (CLA), and secondary bioactive compounds, such as phytochemicals. The objective of this study was to compare fatty acids (FAs), micronutrients, and phytochemicals of beef fed a biodiverse pasture (GRASS), a total mixed ration (GRAIN), or a total mixed ration with 5% grapeseed extract (GRAPE). Consumers consider tenderness and steak color to be two important attributes associated with meat quality. However, inconsistencies in both tenderness and steak color remain despite similar production practices of beef cattle. Stressful events before harvest may impact meat quality by initiating certain pathways such as abundance of heat shock proteins (HSP) and oxidation within the skeletal muscle. Heat shock proteins have been associated with tenderness while oxidation may affect steak color and flavor. In this study, 40 Holstein steers were administered adrenocorticotrophic hormone (ACTH) to mimic a stressful event before harvest. Animals were harvested at different times following the ACTH …

Despite the increasing worldwide demand for beef as a protein source, consumers are concerned about the sustainability of ruminant production systems. Their main concerns are animal welfare for feedlot-fed animals, greenhouse gas (GHG) emissions, global warming and worker safety. Traditional feedlot-based beef production systems have been associated with locally greater levels of soil, water and air contamination, as well as the overuse of antibiotics and growth hormones. The purpose of this research study was to compile regional profiles of the consumers who intend to consume grass-fed beef in the U.S. and to create marketing strategies that would assist producers in marketing their product to consumers. The researcher sent an online survey to a panel of 484 consumers across the U.S. to learn about their perceptions of and intention to purchase grass-fed beef.

Respondents had a weak, positive attitude toward purchasing grass-fed beef but had low knowledge of production practices. These consumers had a desire to eat healthier; however, they wanted meat that was priced right and had …

The objective of this study was to assess the impact of cattle finishing diet and muscle type on meat quality. Consumer sensory response, proximate composition, Warner–Bratzler shear force (WBSF), fatty acid composition, and volatile compounds were assessed from the gluteus medius (GM) and triceps brachii (TB) muscles of cattle (n = 6 per diet) which were grain-finished (USUGrain) on conventional feedlot or 2 forage diets, a perennial legume, birdsfoot trefoil-fin-ished (USUBFT; Lotus corniculatus), and grass-finished (USUGrass; Bromus riparius). The primary objective was assessment of effect of sample pooling on Tritrichomonas foetus detection using qPCR in beef bulls within 5 logs of trichomonad concentration in spiked preputial samples. The secondary objective was to use qPCR Ct values to estimate the percentage of beef bulls in the field population within each log of trichomonad concentration. Solutions containing none, 1,10,100,1000 and 10,000 trichomonads (T)/ml were made and tested by qPCR. Gray wolf (Canis lupus) depredation on beef calves has been studied extensively in recent years. As wolf populations increase throughout the United States there is a corresponding increase in wolf/livestock interactions. Most research concentrates on summaries of reported depredations and surveys of producers affected by depredations. The objective of this study was to present data on the fate of beef calves on 3 farms in Minnesota and Wisconsin over a 2-year period. Selection, development, management, and nutrition of heifer calves to be used as herd replacements are key factors in maintaining beef herd productivity. A cow/calf producer, to be successful, must have some goals or criterion for heifer selection and development. For practically all Utah cattle production areas, economics dictate that heifers must calve as two-year-olds. Heifers must be properly developed and managed to permit this. In recent years, the most revolutionary increases in beef cattle weights and feeding efficiencies have resulted from the development and use of growth stimulants, feed additives, and antibiotics. These nonnutritive products not only improve the rate and efficiency of gain but prevent certain diseases as well. Their use has significantly improved beef cattle production efficiency and provided a greater return per dollar invested than any other factor in the livestock industry. A feeding trial was conducted comparing four finishing diets, typically fed in this area, two hormone implants zeranol (Ralgro) and estradiol 17-beta (Compudose), and a feed additive. Thirty-two Hereford steers were fed in individual pens to maintain accurate intake records. A computer program was developed at Utah State University (USU) to aid in obtaining a more complete individual performance record keeping system for beef cattle in Utah. Some computer programs for beef cattle records presently exist but a program was needed that was readily available to the USU animal science extension and resident staff.
