The two studies in this thesis were conducted to: 1) investigate the impact of corn silage moisture content and kernel processing at harvest on growth performance, efficiency of dietary net energy utilization, and carcass traits in finishing steers when fed at 20% DM inclusion in diets containing modified distillers grains plus solubles; and 2) determine the influence of equal cumulative roughage inclusion in a single diet or twodiet system during a 210-d backgrounding-finishing period in pre-conditioned beef steers on growth performance responses, efficiency of dietary net energy (NE) utilization, and carcass traits. The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. The specific objectives were 1) determine the effect of a rumen-protected long chain fatty acids fed during finishing on live performance, serum fatty acid profile, carcass traits, and predicted carcass composition, and 2) determine effects of feeding brassica-based cover crops to cattle during backgrounding on live animal performance, carcass characteristics, tenderness, juiciness, and flavor of strip steaks, and case life of ground beef and strip steaks. Management of cattle during the receiving and backgrounding phases can influence the performance of feedlot cattle. The receiving phase is a stressful time for cattle entering the feedlot and quickly adapting cattle to milled feed can impact their productivity. Silages are often viewed as less desirable feedstuffs in receiving diets for newly-weaned calves. The objective of this 2-yr study was to evaluate effects of roughage source in receiving diets on cattle performance, diet mixing, and diet integrity.
