The purpose of this public abstract is to present research objectives, societal benefits, and costs associated with this dissertation. This dissertation is one the outcomes of a three-year $155,450.86 project whose number is UTA01008. Kynda Curtis, Associate Professor, Department of Applied Economics proposed the project to assess consumer demand and purchase motivations for differentiated produce across direct marketing outlets. In general, this dissertation seeks to analyze consumer primary motivations for attending farmers’ markets, their preferences, and their willingness to pay for differentiated fresh produce. To accomplish this task, we develop three essays.

The people of the Islands of Fiji suffer from a growing prevalence of noncommunicable (NCD) diseases that are often nutrition related. Much of the blame for the growing rate of these diseases is due to lifestyle choice, specifically food-related decisions. Fiji’s nutrition concerns and NCD prevalence are greater in urban centers, compared to a lower frequency in rural villages. Contrasting demographics are composed of dissimilar food environments that influence inhabitants’ food decisions, in turn increasing the prevalence of nutrition-related concerns.

Small burnet is a relatively unknown plant that is commonly used in North America. It is a hardy, relatively long lived forb native to Eurasia that grows well in most of North America. It is considered to be excellent forage for livestock and wildlife and because of its evergreen nature there is interest in its use to extend grazing of pastures and rangelands into late fall and winter.

This project was funded through the National Children's Center for Rural and Agricultural Safety and Health as part of the pilot study program for 2011-2012 fiscal year. The project team proposed a one-year, $19,991 project to conduct a formative needs assessment of Diné parents for the prevention of agricultural injuries to children who are helping farm or ranch. The assessment utilized a survey constructed of closed and open ended questions to gauge Diné farmers' and ranchers' perceptions of injury risks to children who live or work on an agricultural operation. Until the last half century, land development patterns in the Intermountain West were designed after the Mormon settlement pattern. With its gridiron streets and in-town farmsteads, this pattern gave families the opportunity to grow crops and raise a few animals on their one acre or less in town, with the added advantage of having a social life. Microalgae are single celled plants that inhabit aquatic and terrestrial environments across the planet. Many species are oleaginous, which means they are capable of producing oils, similar to many higher plants we are familiar with like canola, safflower and coconut. Different from higher plants, however, algae have simple structures that allow them to grow at very high rates. Due to these characteristics—oil production and rapid growth rates—algae are considered a promising future source of oil. Algal oils could be useful for production of food for people, feed for animals, biodiesel, detergents, and many other applications.

Intervention projects in the developing world normally aim to satisfy either the nutritional needs of a group, or advancing the economic stability, but not both. One of the many issues that may arise by narrowly focusing and creating an aid program is that although a group may be fed, they are not equipped to mitigate risks that will arise after project completion and thus continue or revert back to a malnourished state. A bridge is required to join the economic and nutritional programs to create aid interventions that are sustainable past the point of donor separation.

This research sought to determine the factors that influence former high school FFA members' reasons for joining and participating in the Collegiate FFA.

The study showed that students who are involved in the National FFA at the secondary level are more likely to join Collegiate FFA while attending a university that offers the Collegiate FFA option. The purpose of this study was to determine if having fewer operator-controlled variables during welding will improve secondary students' ability to meet weld quality standards for an AWS 1F test. Two different welding processes, Gas Metal Arc Welding and Shielded Metal Arc welding, were used in the research. The population of this study (N = 71), participants were randomly assigned into one of four treatment groups. The study was conducted over six class periods. Nationwide, mathematical scores have been a topic of concern among elementary and secondary educators for many years. Teaching contextualized math has been found to be effective and includes providing a direct application to real-life scenarios rather than teaching linear equations and algebraic principles outside of their application.
