Failure of beef carcasses to achieve desirable carcass specifications represent inefficiencies within the supply chain, namely greater carcass processing costs and the inability of the resulting primal cuts to conform to high-value market specifications. Analysis of a representative sample of prime Irish beef cattle conducted in this thesis determined that 59% of cattle fail to achieve the desired carcass specifications of the supply chain at slaughter. The objective of this thesis was to use readily available information to define strategies that could help to reduce this statistic. Maximising pasture utilisation through optimal grassland management is vital in terms of ensuring the economic sustainability and mitigating the environmental impact of both Irish and global pasture-based livestock production. Frequent and accurate measurement of grass quantity and quality is one of the main methods of maximising grass production and utilisation on pasture-based farms. While the Irish agricultural sector accounts for just 6% of the working population of Ireland, it consistently has the highest proportion of fatal incidents of any sector - generally ranging from between 35% and 45% of all workplace fatalities in any given year (Health and Safety Authority, 2015). Economic losses that are caused by Mycobacterium avium paratuberculosis (MAP) infections represent a major obstacle for farmers and also for the dairy industry. In order to control the population of MAP, alternative control agents must be investigated. Budgeting grass supply allows producers to minimise the quantity of purchased feed required in the diet of grazing livestock.
