Modeling Of A Meat Cooking Process For On-Line Monitoring And Control, Oralia Garcia

A heat transfer model is developed to predict cooking time of meat patties given the initial temperature of meat, oven temperature, and meat properties to monitor and control a cooking process on-line. Experiments were performed to find the cause of variability in cooked weight and raw temperature effects in forming and final cooked temperature. Advanced charting techniques concluded that only common causes of variability were present in the process. Thermal conductivity experiments were performed to determine the thermal conductivity of meat (k), which was compared with the properties of meat published in literature to validate the experiment. An operating submarine creates a unique air quality mixture of compounds that result from a combination of human metabolism, construction materials, materials brought onboard and compounds created through the interaction of ship systems. A comprehensive study of submarine atmospheres is ongoing during deployments of U.S. Navy nuclear submarines. As part of the overall effort, a paired air sampling comparison field validation was conducted to compare the air sampling effectiveness of passive diffusive monitors compared to more traditional active air sampling methods when sampling for acrolein, formaldehyde and ozone in the enclosed submarine atmosphere. A theoretical model for the existence of a Critical Size Defect (CSD) in certain animals is the focus of the majority of this dissertation. Adam [1] recently developed a one-dimensional model of this phenomenon, and chapters I–V address the exist the CSD in a two-dimensional model and a three-dimensional model. The two dimensional (or 1-d circular) model is the more appropriate for a study of CSD's. Hybrid composites of wood and fiber reinforced polymers (FRP) exhibit a flexibility of design properties through choices in fiber type, amount, orientation and resin type. With this flexibility comes the need to measure the durability of the composite material system, especially the bond between these two materials due to their markedly different responses to moisture. This study is two-fold; the first section examines methods for the mechanical testing and durability of wood/FRP laminations.
