Community colleges are among many other institutions increasing course offerings online, but there is still some concern about the quality of online learning. Educator concerns, a lack of empirical evidence on biology courses offered online, and the need for an equal opportunity for education support the need for clarification of the quality of distance education in biology, especially in the community college setting. A qualitative investigation was conducted to explore the phenomenon of abstract cognition among a purposive sample of 5 secondary scholastic chess club participants. The case study enabled the researcher to explore the faculties of abstract cognition among students of contrasting skills and abilities in playing chess. The study also allowed for the consideration of potential visual-spatial, logical, academic, social competency and life benefits of chess play. The purpose of this study was to understand the benefits of membership in the Future Farmers of America (FFA) student leadership organization among Tennessee FFA members by surveying members attending Camp Clements FFA Leadership Training Camp. The study focused on the fulfillment of FFA members’ basic human needs as defined by Abraham Maslow (1943). The three needs on which this study focused are: love and belonging, self-esteem, and self-actualization (1943). This study explores the topic of academic clustering within the football and men's and women's basketball teams at the University of Arkansas. Given the prominence of collegiate sport in America, this paper examines a relatively understudied topic regarding student-athletes and education. Using a mixed methods approach, the topic of academic clustering is analyzed statistically, as well as through in-depth interviews with student-athletes and academic advisors in the athletic department. Due to their limited resources, rural, older adults in the United States are at risk for poor diet-related health outcomes. Nutrition education is a key component in improving health outcomes in older adults. Cooking Healthy, Eating Smart (CHES) is a nine-lesson curriculum designed to teach rural, older adults culturally appropriate nutrition and food safety information. This study determined if the use of the student oriented learning outline (SOLO) in a University of Arkansas equine production classroom had a positive influence in three areas: mastery of material taught, retention of material taught and voluntary positive student behaviors related to the use of course material. Thirty-one students who were enrolled in 2012 were in the non-SOLO group (control), and 25 students who were enrolled in 2013 were the SOLO group (treatment). My interest in this subject matter is derived from my personal experiences with injuries related to the performance of percussion. This project was initially created for use at Fort Hope in Arroyo Grande, California. It designs lesson plans created to teach children about the beef cattle industry. The project consists of lesson plans for three age groups: 7-9, 10-12, and 13-15. Each age group will learn various aspects about beef cattle, and lessons will increase in complexity as the children advance age groups. The groups will spend six days in lecture completing worksheets and activities, and on the seventh day, after completion of a review game, the children receive certificates. Objective: To collect and analyze injury data from two leagues in the Midlands area of South Carolina. One of the leagues is an age-weight league, meaning athletes have to be within a certain age range and weight range to play on a specific team. The other league was an age-only league, meaning athletes have to be within a certain range to play on a specific team. Results: For the two seasons that injury data was collected, the age-weight league had 208 injuries and the age-only league had 109. In particular, we focused on increasing the students’ opportunity to experience fun science experiments that still presented a strong take-home lesson. In doing this, our goal was to increase the students’ interest in science, technology, engineering, and math (STEM) careers.

Vitamin D deficiency is considered to be a pandemic with implications for compromised bone health and other chronic diseases. Few studies have examined vitamin D status in college-aged individuals where prevention of future health consequences is still possible. Serum vitamin D 25(OH)D status and vitamin D intake were examined in 98 college students ages 18-29 years during winter. BMI was classified as < 25and 25 or greater. Race was categorized as Caucasian or other. Overall, 69.5% had suboptimal serum vitamin D levels, <30ng/mL. Only 8 students (8.2%) met the EAR (400 IU) per day for vitamin D intake. t tests were used to determine if there were significant differences in serum vitamin D level and dietary intake based on gender, race and BMI. Significant differences were found in serum vitamin D level when compared by gender and race. Females tended to have a higher serum vitamin D level than males. Those representing minorities had lower serum vitamin D levels than Caucasians; One hundred percent of the minority students had suboptimal serum vitamin D levels. Based on these findings, dietitians should increase efforts to target college-aged individuals in educational programming related to factors affecting vitamin D synthesis, vitamin D intake, and health consequences of suboptimal vitamin D status, particularly in winter. Consideration should be given to vitamin D fortification of foods that meet the preferences of today’s consumer.

The purpose of this project was to create an empowerment program for children with severe food allergy (SFA) in a residential camp setting. Despite recent advancements in research, there is no cure for SFA, thus there is a need for programs to help children manage their allergies and cope with the ramifications of their condition. Quality of life is a major concern for children with SFA, as the constant fear of exposure to an allergen can lead to high levels of anxiety. The purpose of this study was to determine if three elementary school garden club programs influenced students' attitudes and behaviors regarding fruit and vegetable consumption. Both quantitative and qualitative data collection and analysis took place, in the form of pretest and posttest questionnaires as well as participant interviews. Overall, non-significant results were found in the quantitative portion of the study, which led the researcher to determine that the garden club program had no significant effect on the participants regarding perceptions of fruit and vegetable consumption. The purpose of this mixed method study was to assess the effectiveness of agricultural communications curriculum developed and incorporated into a semester-long agricultural leadership and communications course for secondary agricultural education programs in Arkansas. This study was comprised of three parts including a pilot test, teacher training assessment, and a descriptive field test over a two-year period. The purpose of this study was to evaluate changes in muscle power performance in a horizontal (forward movement), vertical, and lateral directions in collegiate basketball players due to the presence of an in-season resistance training program (ISRTP). Four basketball teams were recruited for this study. Two women's basketball teams and two men's basketball teams participated with one team in each gender participating in an ISRTP and one team not participating in an ISRTP. The purpose of this study was to determine the effects of online learning aids on student performance and engagement. The thirty-five participants of the current study were students enrolled in two sections of a junior level Medical Microbiology laboratory. The experimental section was required to spend ten minutes each week on an online learning aid. Grouper landings contribute significantly to global fisheries, and many populations are suffering from unsustainable levels of exploitation. The large size, site specificity and catchability of most groupers increase susceptibility to fishing pressure, and a large number of grouper species throughout the world are currently overfished. Minorities and women continue to be underrepresented in science, technology, engineering, and mathematics (STEM) fields. In graduate education, factors such as racism, prejudice, discrimination, sexism, stereotypes, tokenism, and a lack of role models can all plague students and contribute to uncompleted degrees and non-entrance into STEM fields. One of the tools being used to combat these barriers is effective mentoring. Graduate students and their advisors generally have close working relationships and advisors serve in a tremendously important role in the development of the graduate student, so an effective mentoring relationship is vital.
