The literature indicates a lack of validated scales to measure nutrition knowledge, attitudes and behaviors in preschool-aged children. Reliable and valid assessment tools are critical in the development of nutritional interventions for young children; careful design, including psychometric evaluation of reliability and validity, is the best approach to scale development. Best practice points to an efficient, yet comprehensive look at the constructs of knowledge, attitudes, and behaviors. This multi-phase study included 298 preschool children ages 2-6 years (151 girls, 147 boys; mean age 3.936). In this Integrated Master's project, I argue that a new curriculum is needed to address the following: (a) plant-based foods and from-scratch food preparation practices are strongly connected to positive outcomes for children, (b) diets high in processed foods can lead to negative health outcomes (c) students aged 8-10 are particularly well suited to learn more about food, (d) studying food offers many opportunities for interdisciplinary learning across many subjects (literacy, math, science and social studies) and (d) food-focused learning connects particularly well to common learning objectives for students in grades 3-5, yet (e) there is currently a dearth of …

Changing demographics in the United States to a minority-majority culture require health care professionals who are culturally competent to provide appropriate care to patients. In a university in the Mid-Atlantic region of the United States, a gap existed between student education and the culturally competent professional practice of entry-level registered dietitians. Using Freire's notion of social justice and Vygotsky's constructivist theory as the conceptual frameworks, the purpose of this study was to explore educators' instructional strategies that promoted cultural competence in nutrition and dietetics education.
