The increase in obesity rates in America’s youth could be a reflection of undernourished school lunches, a decrease in physical activity, and the lack of knowledge of health and nutrition. Children who come from a low-income family are more likely to be affected by these circumstances. School gardening may be a way of replacing those impacts. This senior capstone research project examines the benefits of school gardening on low-income elementary school students when implementing as part of the curriculum in schools.

For this Capstone Project, the researchers investigated how monolingual teachers view the support and resources they received to teach English Language Learners (ELL) and what they thought could be done to improve their teaching effectiveness. An evidence based argument is offered that monolingual teachers were not being provided with effective support and resources. More specifically, three themes emerged from an analysis of the data obtained from interviews of monolingual teachers and administrators. The focus of this Capstone project is on the effectiveness of service learning and its role in teacher preparedness. This is an important issue for Liberal sStudies students, professors, and the community because in the Integrated Teacher Education Program, service learning is treated as preparation for teaching, and it can be seen that way for Traditional Pathway students as well. Technology has radically changed the ways in which students and teachers function within the classroom. The use of mobile technologies, specifically laptop computers and internet use, has transformed teacher instruction along with student expectations. Given that students have a high exposure to technology in the classroom, especially at the middle school level, this senior capstone examines the impact of growing technology on their reading and writing skills through the use of literature review, teacher interviews and survey, interviews with principals and superintendents, and online teacher survey. This Capstone Project focused on Social-Emotional Learning (SEL) to help manage behavioral problems that students may face. A class of 25 fourth-grade students attending a public K-5 school participated in this Capstone Project. SEL teachings were condensed into a four-week lesson plan which focused on various skills, catered to help this class’ specific deficits. To match the students’ needs, the lessons were designed to promote positive participation and raise self-esteem so students feel comfortable sharing out during discussions. The purpose of this paper is to establish the importance of cultural-representation in schools where the majority of the students identify as Latino. The participants for the Capstone Project included a classroom of third-grade students in a public elementary school located on California’s Central Coast. Because of their inexperience, emerging adults often have a difficult time navigating healthy romantic relationships. For many, the skills necessary for quality relationships are usually learned through parents, friends, or mentors. Foster youth, in particular, may struggle more in developing and sustaining romantic relationships due to the lack of or inconsistent parental guidance or mentoring. To address this, I have created a two-hour lesson for emerging adult foster youth attending Hartnell College in Salinas, California. The content will be comprised of the characteristics of a healthy relationship, role-play scenarios, identifying unhealthy relationship behaviors, and how to use healthy relationship behaviors.

Although not all women faculty of color experience discriminatory treatment we can not ignore the lived experiences of these women who are in a disadvantage within academia. Preschool children are often not exposed to the importance of environmental conservation. Preschool curriculum typically focuses on social, physical, emotional, and simple academic lessons such as alphabets and numbers, which overpower any curriculum geared towards environmental conservation. To address the lack of knowledge on this topic in preschool settings, I created a curriculum about the three r’s of environmental conservation; reduce, reuse, recycle. I implemented a three day curriculum to four and five year old children at the Monterey Peninsula College (MPC) Child Development Center, in Monterey, California.

In classrooms throughout the country, you can hear students moan about the difficulty in learning mathematics. This senior capstone examines the students’ mindsets about mathematics in Monterey County through the use of literature review, classroom observations, and interview with teachers. The findings reveal that students’ mindsets can be changed over time if teachers have the right tools and appropriate training to help students.

C.A.S.A, Court Appointed Special Advocates, of Monterey County is a local nonprofit whose mission is “to train and support community volunteers who advocate for abused or neglected children placed in foster care, upholding the children's rights while pursuing a safe and permanent home” (CASA of Monterey County, n.d.). Foster youth in Monterey County do not have enough online resources that provide information on education, employment, and housing.
