Sports nutrition is an important aspect of an athlete’s training and improvement, yet it is often overlooked when it comes to younger competitors. Four posters were created with the intent of providing adolescent athletes, their parents, and their coaches with information about important topics in sports nutrition including a general overview of nutrition goals, hydration strategies, recovery nutrition, and nutritional considerations for vegetarian and vegan youth athletes. The posters were designed to appeal to adolescents from the ages of 13 to 18, and each poster covers its designated topic in detail appropriate for middle and high school-aged athletes. Older adults are often classified as those above the age of 65 years old. Educating and training a multisectoral food systems workforce is a critical part of developing sustainable, resilient, and healthy food and water systems. This paper shares perspectives from a working group of educators, learners, and food systems subject matter experts that collaborated over the course of a year to develop, pilot test, and evaluate two interactive webinar series with a multi-site cohort of dietetics interns and graduate students. The three-part webinar series format included a training webinar, a practice activity, and a synthesis webinar. To understand the impact sports nutrition knowledge has on the risk for developing LEA in Female Cross Country Runners.
Background
The International Olympic Committee introduced the concept of Relative Energy Deficiency in Sports (RED-S) to accurately encompass the condition previously known as the Female Athlete Triad. LEA is the root cause of RED-S. (Mountjoy et al., 2014). The purpose of this study was to measure sports nutrition knowledge and the impact knowledge level has on the susceptibility to develop LEA in female cross country runners.

The Mathematics of Nutrition Science is a workbook designed to integrate and contextualize developmental mathematics into an introductory college level Nutrition class. Definitions and skills from Community College Level Elementary Algebra and Quantitative Literacy courses are explained through examples analyzing the nutritional content of different foods. The book contains exercises for students to practice these skills, and also to reflect on the concepts through short writing assignments aligned with developmental English. These materials could be used by Nutrition course instructor in many different ways, and are designed to be self-contained and require minimal mathematical instruction.

The Islamic Foundation of Lincoln is a growing population within Lincoln including many different racial backgrounds, ethnic identities, and languages. Due to these various backgrounds communication may impair the education of families as well as their attitudes and behaviors. Although there are programs developed for many other minority groups, the Muslim (population comprising the Islamic Foundation of Lincoln) population does not have any data obtained from the community in terms of nutrition and physical activity behaviors, attitudes, and knowledge. In 2010, President Obama signed the Healthy Hunger Free Kids Act, establishing a monetary incentive for schools that served meals following a more rigorous nutritional requirement than standard guidelines. This act is a step in the right direction towards placing more importance on school lunches, however America’s lunchroom practices continue to be environmentally unsustainable, and students absorb this message. The production and transportation of processed cafeteria food contributes to climate change, its packaging is polluting, and its consumption contributes to obesity. A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. Strategic Discussions for Nebraska is a program in the University of Nebraska-Lincoln Institute of Agriculture and Natural Resources that produces an annual publication called Opportunities for Nebraska, focusing on a different topic each year. The publication is produced in hard copy and also is available online at www.sdn.unl.edu.
The content for each publication is produced by UNL students enrolled in a Magazine Writing course each spring semester, taught by the SDN coordinator.
