A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). This study investigated leadership development of Registered Dietitians in nationally elected or appointed leadership positions of the American Dietetic Association. An explanatory sequential mixed method design: participant selection model was used collecting qualitative data after a quantitative phase. Demographic data were collected via a mailed survey questionnaire followed by, with consent, a web based validated Sentence Completion Test International- Maturity Assessment Profile Research Version (2) (SCTi- MAP) to determine their stage of leadership development. Everyday choices define lifestyle and can significantly affect body weight. Being too fat or too thin increases the likelihood that health problems will develop. Small daily choices may seem insignificant, but when they are repeated for months and years, their influence is subsntatial.
This research publication discusses the following points: what is a healthy weight?; choosing a healthy weight; height/weight tables are the traditional measure; body shape is as important as weight; total health affects weight; obesity has consequences; if you need to lose weight, avoid fat diets; and maintaining a healthy weight requires daily attention.
