The Know-Hubs project offers a unique opportunity for the partners to share experience about the operations and functions of knowledge centres, to identify different ways of working, to explore the diverse services provided, consider the different missions and to develop relevant state-of-the-art resources for use. The Know-Hubs project will allow for the transfer of knowledge between both the partners and the organisations of interest. The project will enable both direct and indirect engagement of participants from different sectors and in a range of country settings. Study abroad programmes designed to meet industry needs for graduates with inter-cultural skills and a global outlook have low participation rates in Canada and Ireland due mainly to financial barriers. Embedding the use of High Definition Interactive Videoconferencing (HD IVC) in higher education has the potential to create ‘Global Graduates’ with the skills sought by employers today. The involvement of the School of Culinary Arts and Food Technology in international mobility for work placement has experienced exponential growth over the past five years with the assistance of European Leonardo da Vinci and Erasmus funding for European internships. The main purpose behind the European Commission funding ventures for internship (experiential learning) is to enhance the students’ cultural awareness, cultivate their language skills and develop their professionalism in their field of study. This paper provide an overview of the development of Erasmus internship and relationship between the the European Commission, the HEA, and DIT.
