Megan Kaser, a recent 2017 alum in the College of Health and Human Sciences at Purdue University, describes her experience with Give Hope, Fight Poverty (GHFP)—a nonprofit organization in Indianapolis, Indiana. She is currently pursuing a master’s degree in physician assistant studies. GHFP’s mission is “to foster philanthropy domestically by designing service-learning programs that engage U.S. college students with rural communities in Swaziland, Africa, and work together to educate, empower, and lift orphaned and vulnerable children—particularly those living in child-headed households— out of poverty” (Give Hope, Fight Poverty, n.d.). Several exploratory writing assignments were developed and implemented in a 300 level nutrition class based on the Backward By Design Strategy. A weekly written reflection assignment was analyzed, summarized, and reflected for its strengths/weakness. Strategies were identified to use this assignment in the future better.

The Food and Agriculture Organization (FAO) of the United Nations initiated the World Food Summit in 1996 to discuss and call attention to the “widespread undernutrition and growing concern about the capacity of agriculture to meet future food needs” (Food and Agriculture Organization, n.d.). High fat-low carbohydrate (HFLC) diets are a common approach to enhancing overall health and performance in endurance runners. Total macronutrient contents in plasma may change in response to diet and exercise. PURPOSE: To examine the responses of total plasma macronutrient contents in trained males following dietary manipulation in combination with aerobic exercise. METHODS: Eight distance runners that typically consumed high-carbohydrate (HC) diets switched to a HFLC diet for 3 weeks. The caloric intake during the HFLC intervention derived from 70% fats with ≤ 50g of carbohydrates. Participants maintained their normal fitness routines. Indoor treadmill exercise for 50 minutes …

ABSTRACT
Children in poverty tend to have malnutrition and iron deficiency, and often receive their only meals for the day from a school nutrition program. Students of poverty are underperforming their academic peers. The average reading score of a student can be predicted by the accumulated levels of childhood poverty. Research has found that iron can have a positive impact on brain health. Nutrition deficiencies during the adolescent years may increase the risk of decreased cognitive function. School breakfast and lunch programs follow USDA guideline that limit portions, fats, salts, and sugars, but do not fortify vitamin and minerals necessary …
