A subset of vocational major programs that prepare students for employment after completion served as a participant pool. However, participants in the study chose not to use …

Association for Career and Technical Education, 2016; American Institutes for Research, 2013; Southern Regional Education Board, 2008). The central research question for the dissertation was: What value do local community college students believe their high school Career and Technical Education program participation provided? English For Baking: Lessons For Kitchen Workers Using On-Site Learning, Christopher Torossian Dec 2018

English For Baking: Lessons For Kitchen Workers Using On-Site Learning, Christopher Torossian

Master's Projects and Capstones

Today, the back of house staff in culinary kitchens is comprised largely by migrant workers whose native language is something other than English. At times this can create issues among workers due to communication errors or complete lack of communication all together, posing issues for not only cooking, but it can also be a threat to kitchen safety as well. Additionally, due to native speaker stigma surrounding non-native speakers of English, many workers are often denied the chance at a higher position in the workplace simply because of their low communicative competence, despite their actual talents and skills in the …

Why Career And Technical Education Teachers Contribute Intellectual Capital To Open Education Repositories: A Case Study, Kelley J. Manley Dec 2018

Why Career And Technical Education Teachers Contribute Intellectual Capital To Open Education Repositories: A Case Study, Kelley J. Manley

Graduate Theses and Dissertations

High quality Career and Technical Education (CTE) teachers are necessary in order to prepare students to fill the gap in the nation’s technical workforce. Technical skills taught by high school CTE teachers assist students as they continue their education in post-secondary technical schools. One of the many challenges reported by CTE teachers is the time-consuming development of relevant curriculum. The open education resource (OER) movement has been reported in research to alleviate some of these challenges for teachers, but research is lacking in the area of …

Understanding Why Students Take Industry-Based Credentialing Examinations: Instrument Development And Pilot Study, Jennifer H. Lawrence Nov 2018

Understanding Why Students Take Industry-Based Credentialing Examinations: Instrument Development And Pilot Study, Jennifer H. Lawrence

Doctoral Dissertations

Educational credentialing is complicated for students with the addition of industry-based credentialing (IBC) in traditional academic and career and technical fields (Bahr, 2015; Lumina Foundation, 2015; Xu & Ran, 2015). Human Capital Theory and Cognitive Engagement Theory framed this study which looked at IBC training from the student point of view (Grisham, 2013; Saldana, 2016; Walters, 2004). The body of literature on credential training is sparse and largely focused on institutional policy rather than student perception and participation (Bahr, 2015; Xu & Ran, 2015). There is evidence that salaries are positively correlated with IBCs and studies show that employers pay …

Finding Light In The Caves: Achieving Professional And Personal Bliss On A Journey In Cheeseworld, Mitchell Bleier Sep 2018

Finding Light In The Caves: Achieving Professional And Personal Bliss On A Journey In Cheeseworld, Mitchell Bleier

Dissertations, Theses, and Capstone Projects

The most common approach to educating the populace places learners in contrived, curriculum-centered learning environments that are characterized by uniformity, standardization, and incessant high-stakes testing. The primacy of efficiency, an externally imposed and shifting set of non-negotiables, and top-down management dominate schooling. This set of circumstances tends to marginalize learners whose particular attributes, needs, wants and goals locate them far from what can be considered representative of the average student. In other words, efficiency trumps difference and leaves many learners in need of alternative paths to happiness and fulfillment (Callahan, 1962).

This system works for some, but for many it …

Opportunities Beyond High School: An Eld Unit For Newcomer Students, Karen Toepp

Master's Theses

As an English Language Development (ELD) teacher, I noticed the junior newcomer students at my high school in the Bay Area of California were not being prepared for jobs or careers after their graduation. As newcomers, they are working through trauma, reuniting with their families, learning a new language and adapting to a new culture. Though many arrived with high expectations for school, students stopped connecting graduating high school with having access to higher education, which meant more job training and better employment opportunities. A lack of motivation and unskilled teachers contributed to students struggling in school and leading to …

Food Network Fallout: Why There Are Labor Shortages In Restaurant Kitchens, Jennifer M. Dillon

Dissertations, Theses, and Capstone Projects

There is a desperate shortage of line cooks and kitchen staff in restaurants all over the world. In New York City, kitchens are running with as little as 50% of staff capacity, due to a lack of people, qualified (defined as certified or skilled) or not, willing to work in restaurant kitchens, so chefs are forced to simplify their menus.[i] I design workforce development programs for homeless men in New York City, 70% of whom have an incarceration background. On paper, the culinary field seems like the perfect match for the population that I serve; there is a huge …
