Introductory biology courses at two-year, open enrollment colleges in America are presented in a variety of different course delivery formats. Traditionally, most students have enrolled in seated or face-to-face (F2F) lectures and laboratories. There is increased demand for courses presented online or in a hybrid format, although some studies report higher attrition rates, and lower grades for these course delivery formats. The purpose of this study was to examine if there were academic differences among F2F, hybrid, or online introductory biology courses by analyzing pre-course and post-course assessment scores, final grades, attrition rates, and students’ perceptions of course satisfaction. This document analysis examined the academic library and the changing role of the academic librarian in higher education. A comparison of the trends and issues reported by prominent librarians in the 20th century was made to those reported in the 21st century. Emphasis was placed on the following decades: 1970s, 1980s, and 1990s in the 20th century and 2000s (through 2013) in the 21st century. Cooking skills are important but declining, with significant health, social, cultural, political, economic, and environmental implications. Food and cooking education can begin to address some of the negative effects of the cooking skills decline. This thesis makes the case for cooking classes in the education system, especially in higher education. The paper begins with a history of cooking education and skills, outlines the implications of the decline in skills, and discusses the potential for cooking education in higher education. The National Survey of Student Engagement (NSSE) is an assessment tool administered to university undergraduate students and used to determine the degree to which they are engaged with their academic environment. The NSSE asks students to assess themselves in five categories: level of academic challenge, active and collaborative learning, student-faculty interaction, enriching educational experiences and supportive campus environment. This correlational study, also consisting of Chi-squared tests and t tests, examined the relationship between data from the NSSE by Georgia Southern University (GSU) students (independent variables) and whether first year undergraduate students persisted (re-enrolled) to their second year (dependent variable). As a result of growing attention in cross-cultural research, existing measurement instruments developed in one language are being translated and adapted for use in other languages and cultural contexts. The benefits of having the same instrument across cultures can only be realized if the process of translation and adaptation of the measurement instruments produces measurement operations that function similarly across national and cultural boundaries. Producing invariant measurement instruments that assess educational and psychological constructs provide a way of testing the cross-cultural generality of theories that include these constructs.
