Childhood obesity in American children has tripled in the last 20 years, and 85% of current healthcare spending is linked to diet-related diseases. The consumption of highly processed foods is linked to these trends and makes up more than half of an average American youths’ diet. Reducing the consumption of highly processed foods in children’s diets can be addressed, in part, by addressing childhood neophobia (willingness to try new foods) associated with whole foods like fruits and vegetables. This research examined agricultural graduate preparedness needs through the lens of agricultural industry professionals. In the rapidly changing industry environment, continual review of agricultural curriculum needs provides relevant curriculum recommendations for academic programs. This study came at a time when agricultural curriculum was in need of review. Methodology for this study involved a qualitative mixed methods approach employing survey and interview responses. A total of 121 industry professionals, identified through the University of Arkansas Bumpers College Career Development Center, were contacted with the survey link. This study examined how elementary schools prepared students to become lifelong learners as it relates to meeting citizenship readiness initiatives. Traditionally, schools use standardized assessments aligned with college- and career-readiness standards to measure student achievement in the reading, writing, and mathematics curricula. This study sought to examine alternative assessments aligned with citizenship-readiness standards to measure student achievement in the elementary social studies curriculum. Farm-to-school (FTS) programs are supported at federal, state, and local levels as a cross-sectoral intervention to curb rising levels of obesity, strengthen local food systems, and improve school climate and academic outcomes. Comprehensive FTS programming, according to the “3-C” approach embraced by leaders in the FTS movement, includes interventions in three domains: the cafeteria, classroom, and community. FTS programming in these domains may include procurement of local food; school gardens; and education related to food, agriculture, and nutrition. The study examined the acculturation experiences of Asian Indian immigrant math and science teachers in a K-12 urban school district. The study was preceded by a pilot study in 2008 to develop a protocol for dissertation, which examined the acculturation experiences of professional Asian Indian females and cultural values conflict in the United States. The current research investigated if being a math or science teacher in an urban school district has influenced the participants’ acculturation process in the United States. This capstone thesis used curriculum design to impact students’ understanding and attitude towards science. The capstone researcher designed a student-centered curriculum that used place-based education to teach the water cycle. The main goals of the curriculum were to increase depth of understanding and improve students attitude toward science. Using the designed place-based curriculum students would build a connection to the pond on school grounds through multiple visits to the area, using their knowledge of the pond to apply it to the water cycle and by connecting with water resource agencies in their community. The purpose for my correlational cross-sectional study was to explore the influences of proximal and distal forces on curriculum development and how it affects student achievement as it pertains to NJ ASK Grade 3. I sought to determine the strength and direction of the relationships between curriculum customization at the local level and student achievement on the NJ ASK 3 in Mathematics and Language Arts. Seventy-four elementary principals were surveyed pertaining to development, design, and implementation of their curriculum.

Citizenship education plays a critical role in the development of civic attitudes and contributes to the appropriate delivery of a government's policy. However, there is a discrepancy in the literature in defining the meaning and understanding of citizenship concepts. This study is primarily qualitative in nature, using the method of phenomengraphy to investigate teachers' perceptions of citizenship in Morocco. The study recruited six elementary and secondary teachers from Casablanca and Rabat in Morocco to identify their understanding of citizenship. Many curricular innovations, including cross-curricular teaching, are started in schools without adequate teacher preparation and support, reducing the effectiveness of the interventions in supporting student learning. The purpose of this qualitative case study was to describe the implementation of the cross-curricular connections teaching technique in middle schools. Research questions focused on how middle school teachers experienced implementation of cross-curricular teaching at the incident level and how teachers perceived cross-curricular teaching and its long-term value. This materials development project explores the role, use and forms of humor in the classroom. This IPP is a collection of a series of three workshop plans for ELT teacher trainers located in Latin America. The workshop plans are preceded by a rationale that explains the relevancy of the topic, the author’s personal belief statement, and an exploration of final key learnings from developing this project. Each workshop plan is followed by a reflection on aspects that went well along with suggestions for further improvement and a revised version of the workshop plan.

Rather than a teacher-centered approach that relies on textbooks for materials development, a student-centered approach has been utilized in order to encourage participation, allowing the learners to have more input in the learning process. In the current research, alphabet knowledge has been confirmed as a critical component of children's developing emergent literacy proficiency. The assessment of pre-literacy skills, such as alphabet knowledge, plays an important role in the management of children at-risk for poor reading outcomes. This study aimed to better understand the influence of phonological awareness skills, print skills, and receptive vocabulary on the development of alphabet knowledge in at-risk preschool-age children. Statistical analyses revealed that a significant unique relationship was present between phonological awareness skills and the development of alphabet knowledge.
