Concept maps are a popular learning activity that have successfully demonstrated student learning outcomes. Research suggests that concept mapping has a positive effect on recognition, recall, and transfer. Likewise, researchers in cognitive psychology have shown the value of referencing oneself with a concept. Known as the self-reference effect, learners who connect their experiences or traits with new knowledge are more likely to remember that knowledge than if they used other mnemonic devices. Previous research suggests that integrating self-reference in concept mapping may improve recall. The two articles presented in this thesis used a researcher-developed literature-based survey instrument to collect data on the Expanded Food and Nutrition Education Program (EFNEP) in the United States. Data was collected on methods of teaching, communication technologies used, recruitment strategies, barriers to attending classes, and program assistant demographic data. There were 803 program assistants working during the 2018-2019 program year. There were 346 program assistants who completed the 35-question survey instrument during data collection.

Humane education (HE) is a specialized niche in higher education and adult learning. HE provides a curricular framework positioning environmental ethics, animal protection, human rights, media literacy, culture, and change processes as the nexus for understanding and inspiring social change. Research-derived experiences illuminating how educators conceptualize and implement HE in U.S. schools are absent from the scholarly literature. Problem Statement: The frequency and severity of hospital post-discharge events has become a national problem. The increase in readmission rates post-discharge has a negative impact on the patients overall morbidity and increases healthcare costs (Jack, 2012). Librarians at colleges and universities invested in graduate education must understand and incorporate adult learning theories in their reference and instruction interactions with graduate students to more effectively support the students’ learning. After participating in a professional development program about adult learning theory, librarians in this study reported that, in many ways, they already employed teaching and learning strategies grounded in one or more adult learning theories. They also indicated gaining a greater awareness of student development, enabling them to more successfully tailor their interactions.
