Reducing Food Scarcity: The Benefits Of Urban Farming, S.A. Claudell, Emilio Mejia
Journal of Nonprofit Innovation
Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

Our planet is facing many environmental challenges, including climate change, loss of biodiversity and habitat, and pollution, while many of our populations are also experiencing marginalization due to poverty, race, gender, language, ability, and environmental injustices. Environmental hazards and policies often impact those in society who are most at-risk, creating a need for an environmental education (EE) movement that encourages students to challenge and regain control of a system that impacts them. The collaborations between ecosystem restoration and art practices was epitomized by the eco-artist Jackie Brookner who said: “it is not a matter of the scientists providing the hard-core research and artists the soft outreach; rather, the dynamics engendered in the space between disciplines is full of information necessary to solve complex problems at the systemic level”. I spent my nearly 50—year career in marine science working at marine laboratories, most of that as a chief executive officer. So, it is appropriate that my reflections are about marine laboratories, rather than my own science. After relating my career course, I turn my attention to the history and development of marine laboratories along the U.S. coast of the Gulf of Mexico (GOM). Surprisingly, the region’s first laboratory was actually constructed in 1903 at Cameron, LA, but operated less than a decade before closing. While institutions of higher education work to engage PK-12 youth in STEM (science, technology, engineering, and mathematics) concepts and careers via in-person programming, PK-12 teachers and students face many logistical and access constraints for physically traveling to sites off of school grounds during the school day. Throughout the years, electronic field trips (EFTs) have offered a digital way for schools to engage in meaningful ways with museums, parks, laboratories, and field research sites. This unique project at Portland State University (PSU) has been revolutionizing undergraduate community-based learning (CBL) efforts since the collaboration started in 2012. This case study involves a deep look into a year-long CBL effort involving three university instructors, two undergraduate student fellows from PSU’s Institute for Sustainable Solutions (ISS), Green Lents, a neighborhood-based nonprofit, and approximately seventy-five undergraduate students.

Apathy And Concern Over The Future Habitability Of Earth: An Introductory College Assignment Of Forecasting Co2 In The Earth’S Atmosphere, Benjamin J. Burger

Non-science, first year regional undergraduate students from rural Utah communities participated in an online introductory geology course and were asked to forecast the rise of CO2 in the Earth’s atmosphere. The majority of students predicted catastrophic rise to 5,000-ppm sometime over the next 3,100 years, resulting in an atmosphere nearly uninhabitable to human life. However, the level of concern the students exhibited in their answers was not directly proportional with their timing in their forecasted rise of CO2. This study showcases the importance of presenting students with actual data and using data to develop student forecasted models. …

How can the teaching of biology contribute to sustainability education? The authors of this article suggest that their approach has the potential to increase the students’ level of engagement with the natural environment. The scope of biology teaching can be widened by allowing room for more experience and art-based activities. Such a change may deepen and expand the learners’ insights in natural phenomena, which in turn might foster or enhance an attitude of care-taking for the natural environment.

This article sketches two contrasting ideal-typical narratives of sustainability, a disenchanting and an enchanting one, and argues that current thinking in sustainability is mainly situated in the narrative of disenchantment. This narrative is based on various obsolete philosophical assumptions, and hampers the transformation process, as it distances the population from being part of this. It then sketches the narrative of enchanting sustainability and shows how this has the capacity to engage, intrigue and motivate people to be involved. It is rooted in an arts-based approach of connecting aesthetics, associative thinking, reflective practice, emotion-based working, aspiration and intentionality. The article moves …

This paper seeks to assess the three major university sustainability rating systems in the United States on their ability to drive positive sustainability outcomes. Since the mid-2000s the Association for Advancement of Sustainability in Higher Education, the Princeton Review, and the Sierra Club have attempted to rate universities on their sustainability policies and practices. A wide range of actions are rated by these organizations, from energy usage to transportation to procurement to academic offerings in the field of sustainability. This analysis shows that each organization values sustainability in different ways – for example, academics/co-curricular activities accounted for anywhere from 16%-49% …

The paper presents a new initiative, EcoScience + Art, which blooms at George Mason University. The creator explains the background, history, and recent activities of the initiative, and also introduces an on-going special project called “The Rain Project”, a student participatory project to design, construct, and monitor a green infrastructure (i.e., floating wetland) for sustainable stormwater management on campus. The special project is geared to design and present a new paradigm to integrate college education, scholarship, and service. The relevance of the initiative and the special project to STEAM education is discussed.

Both subjects are “everybody’s business” on college campuses, and must be approached in courses across the curriculum, not merely in one course on QR or in one course on Sustainability.
