This personal experience essay features five women professors who, as engaged scholars, seek to continuously respond to the needs of their local community by volunteering their time and expertise to offer educational programs that focus on creative arts and academic assistance for K–12 students. This piece explores the opportunities and obstacles we experienced in using virtual platforms, during the 2020 global pandemic, in order to re-envision our civic responsibilities to engage communities beyond our previous place-based programs.

School Pantry Cook-Off: An Approach To Educate Youth On Food Insecurity, Siew Guan Lee, Gretchen Manker, Nav Ghimire, Laura Foist, Julie Buck

The “School Pantry: Mystery Food Box Cook-Off” is a program designed to increase awareness of food insecurity among youth and teach strategies to prepare healthy foods on a budget. A pre-and-post survey showed a statistically significant difference in participants’ overall knowledge, skills, and confidence level after the program compared to before the program. Findings revealed a hands-on nutrition education strategy via cook-off could educate youth on food insecurity and increase their knowledge and confidence to make healthy and affordable meals at home. Other Extension educators seeking to address food insecurity and food preparation skills among youth can replicate this program.

Taking Youth Voices Seriously: Theatre, Storytelling, And Empowerment With Refugee Youth In Memphis, Tn, Taylor St. John

This project report documents the most recent play-turned-podcast in a multi-year partnership between the Orpheum Theatre Group and the Refugee Empowerment Program in Memphis, TN. Youth from the program have been engaging in From Where I Stand, a theatrical storytelling program that weaves first-person narratives into theatrical performances that are presented for the community. While our third performance entitled, Refugee Portraits, was postponed due to the pandemic, it was given new life in the form of a podcast. Introduction: Recent national data reinforce over 3.6 million young people across the United States are currently using e-cigarettes, but little research exists on prevention and/or youth engagement strategies.

Purpose: Pilot a peer led e-cigarette prevention and advocacy training and determine attitudes and self-efficacy among participating rural high school leaders post-training.

Methods: The study incorporated a one-group, post-test design. New Brunswick, Canada’s K-12 Social Studies curricula erases the myriad histories and experiences of the province’s LGBTQ+ communities. Building on these erasures, this study analyzes how six queer, trans, and non-binary young people (aged 14-17) created cellphilms (cellphone + mobile film production) in response to these absences. Globally, alcohol consumption is a public health issue and a risk factor for drownings among young adults. While studies have identified a prominence of alcohol in youth drownings, little is known about the factors that influence young adults’ involvement in alcohol-influenced aquatic activity. The current study aimed to identify the predictors of young adults’ intention to participate, and past participation, in alcohol-influenced aquatic activity. A reliable and valid survey, informed by the Theory of Planned Behavior, was distributed to young adults (aged 18-24 years) educated in the UK and Australia.
