Prediabetes and Type 2 diabetes mellitus (T2DM) are two common conditions diagnosed in the primary care setting. Both conditions benefit from a healthy lifestyle, managing blood sugar levels, and getting diabetes self-management education and support (DSMES). Within the past two decades, the healthcare community in the US has witnessed a substantial rise in diabetes among adults. Overall, the self-management of diabetes continues to worsen nationally. Minority groups have an added struggle with obesity and have higher rates of obesity in this country than the caucasian counterparts. While minority group parents want more for their children they face many cultural and language barriers related to proper nutrition and hydration. The Mathematics of Nutrition Science is a workbook designed to integrate and contextualize developmental mathematics into an introductory college level Nutrition class. Definitions and skills from Community College Level Elementary Algebra and Quantitative Literacy courses are explained through examples analyzing the nutritional content of different foods. The book contains exercises for students to practice these skills, and also to reflect on the concepts through short writing assignments aligned with developmental English. These materials could be used by Nutrition course instructor in many different ways, and are designed to be self-contained and require minimal mathematical instruction.

Abstract

Incarceration and substance abuse are two of the largest public health issues in America. While the U.S. makes up only 5% of the world’s population, it accounts for 25% of its prisoners. Incarceration affects more than 2.2 million individuals who will eventually return to their families and communities with ongoing family, social and health issues. Women in prison are a particularly vulnerable and underserved population, generally of low education and socio-economic status and although they account for a small percent of the prison population, many are mothers of young children who are likely to become incarcerated themselves. School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. While many researchers have studied school gardens, few have compared two countries, focused on environmental sustainability, or investigated Maine in particular. A thematic unit for integrating social studies and science with other curriculum areas was developed for first grade students. The theme for the unit centered around farms. The unit was divided into five subunits: farms, farm animals, orchards/vineyards (to include fruits of the Yakima Valley and apples), crops (to include vegetables of the Yakima Valley, pumpkins, and wheat), and nutrition/four food groups. The literature was reviewed to establish a theoretical foundation for the unit and for activities that focused on reading, writing, and language development.
