Many college classes have basic information that must be learned before students can master the more complex application and analysis of advanced ideas in the class. Students often struggle with identifying and learning these facts, terms, and principles. This paper reports on a project that evaluated the use of electronic flashcards in two undergraduate engineering classes. The study materials (online flashcards) were developed in conjunction with the university's Educational Technology Office.

Academic knowledge and technology transfer has been growing in importance both in academic research and practice. A critical question in managing this activity is how to evaluate its effectiveness. The literature shows an increasing number of studies done to address this question; however, it also reveals important gaps that need more research. One novel approach is to evaluate the effectiveness of this activity from an organizational point of view, which is to measure how much knowledge and technology transfer from a university fulfills the mission of the institution. Astaxanthin, the “king of carotenoids” has been widely used as an animal feed additive for several decades, mainly in the aquaculture industry. Recent studies have led to its emergence as a potent antioxidant available for human consumption. Traditionally it has been chemically synthesized, but the recent market interest has generated interests in producing it naturally via yeast (Phaffia rhodozyma) fermentation, or algal (Haematococcus pluvialis) induction. This work aims to compare these production processes and their impact on the economical, environmental, and societal scale. HACCP-based food safety programs have been widely acclaimed, accepted and implemented as an effective means of managing food safety risks. While HACCP training is a cornerstone of managing HACCP programs, there is little information about the effectiveness of HACCP training and the durability of HACCP knowledge. Findings reveal a link between involvement level in HACCP activities and the accuracy of HACCP knowledge over time. Opportunities for peer training in HACCP, irrespective of overall experience in the food industry provide favorable circumstances for maintaining accuracy of HACCP knowledge. Through a review of literature, it was found that many schools in the United States are installing operational wind turbines, but it was unclear how teachers were using them in their science, technology, engineering and mathematics (STEM) classrooms. In order to identify how these operational wind turbines were being used and to create a list of expectations for schools with operational wind turbines, this exploratory study surveyed STEM teachers from all across the United States. This study was designed with the purpose to create an online method to deploy the concepts and practical knowledge necessary for the course System Simulation {TEC 5523) offered by Eastern Illinois University. The course is currently offered on a hybrid format, with part of it being ministered in the classroom and the remaining on the online environment. This research focused on creating a set of multimedia and step-by-step lessons aimed to substitute the part of the course that demands the students to be present in the classroom.
