Extension professionals must demonstrate organizational value to garner public awareness and support. Measuring and communicating outcomes that have public value can be challenging. In this study, Ripple Effects Mapping incorporating the Community Capitals Framework was used to evaluate a childhood obesity prevention study, iCook 4-H, of youth-adult pairs in Maine. The objective was to describe the process of generating impact statements through story threads about program benefits to the participants and the potential benefits to nonparticipants, such as family members, friends, and other community members. Food Insecurity And Assistance On Campus: A Survey Of The Student Body, Michael Miller, Gerad Middendorf, Spencer Wood, Sonya Lutter, Scott Jones, Brian Lindshield

According to recent studies, food insecurity affects from 34%-59% of college students. This will continue to be an issue as tuition increases and more low-income and first-generation students enter universities and colleges. Nearly 52% of college students live at, or near, the poverty level, compared to a national poverty rate of 14.5%. This leaves many undergraduate and graduate students with challenging decisions around meeting their basic housing, nutritional, and educational expenses. The purpose of the present study was to compare muscle strength, size, activation, and oxygenation between older women with and without sarcopenia during dynamic fatiguing leg extension bouts with high (5-repetition maximum[5-RM]) and low (30% of estimated 1-RM[30%1-RM]) loads. Eleven women (n = 6 non-sarcopenic [mean ± SE; age = 75.8 ± 2.6y] and n = 5 sarcopenic [age = 74.5 ± 3.1y]) were screened for eligibility and sarcopenic status. Photographer and researcher John Collier first named photo elicitation in a paper published in 1957. Photo elicitation involves a qualitative interview stimulated and guided by participant photographs. This method can help break down barriers between researchers and participants and can promote rich and collaborative discussions (Harper, 1994).

Minority groups have an added struggle with obesity and have higher rates of obesity in this country than the caucasian counterparts. While minority group parents want more for their children they face many cultural and language barriers related to proper nutrition and hydration. Formation of harmful microbes and their associated mycotoxins on rough rice during storage presents negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. Freshly-harvested long-grain, hybrid, rough rice (XL 745) with initial moisture content (IMC) of 18.4% wet basis (w.b.) was used. Taking advantage of inherent natural systems, aquaponic practices hold the potential to serve as an educational, sustainable, and profitable hobby for home gardeners facing common constraints such as temperature, space, and pests. The goal of this research was to assess the feasibility of implementing a small scale (4,542-liter) home -based aquaponic system in a small (48.768 square meter) greenhouse to produce fresh produce and fish protein. System construction and maintenance costs were compared to the value of crops and fish produced to determine whether this aquaponic system is a feasible option for the home grower. Rural Appalachian populations have greater rates of obesity and chronic diseases attributed to lesser consumption of fruits and vegetables (F/V) and physical inactivity. Barriers to F/V consumption and physical activity include poor access and affordability. To help overcome these barriers, a community-initiated walking and farmers market F/V voucher program was implemented.
Participants were encouraged to walk (1.2 miles roundtrip) to the local farmers market to redeem a $10 voucher which could only be spent on F/V. The 16-week program (June – Sept) included 121 participants. Data was analyzed by creating two groups, low-engagers and high-engagers that differed significantly in the …
