“Our infant mortality rate is a national embarrassment.”1 The words seem shocking and harsh across the headline of a 2014 Washington Post article. The thought of America not only not being the best at something, but falling upsettingly behind, is a foreign concept to many who view America as a nation inferior to none. However, the statistics on infant mortality rate tell the stark truth that of 26 “wealthy” countries, the U.S. ranks last, with a sobering 6.1 deaths per 1,000 live infant births.2

This paper examines and evaluates the work of LIFT-Levántate a non-profit organization in San Rafael, California on their school-based nutritional education “health hub,” through health promotion interventions with adolescents. The James B. Davidson Middle School health hub educates students on topics related to nutrition and physical activity with the goal of providing access and increasing consumption of fruits and vegetables while lowering students’ intake of high-fat and sugary processed foods. Through research and observations of the students and families in this community, the data seems to indicate apparent disparities which vary by ethnicity, socioeconomic status and access. This manuscript aims to describe nutritional requirements and needs for children and how technology is being used to improve nutritional knowledge among them. Several technologies and applications are explored, and recommendations are given for ways to improve. Four interactive nutrition games for children are examined: two computer games and two mobile applications. Through revision of performance, nutrition content, attraction, design and attention capabilities, HealthyHeroes was chosen to be the best game for children to learn and have fun with the subject of nutrition.

Background: Hispanics are the largest minority group in the U.S. and by the year 2060 the number of Hispanics is projected to double. They are disproportionately affected by obesity and chronic diseases which translate into decreased quality of life, loss of work opportunities and perceptions of injustice for the Hispanic population. Through this qualitative study, I want to add to the theoretical conversation about garden and farm education in schools and offer a starting point for a conversation surrounding care and gardening/farming in schools. The purpose of this study is to understand how teachers and students demonstrate care while implementing a garden and farm curriculum. The federal government established nutrition assistance programs such as the School Breakfast Program and school districts have implemented Breakfast in the Classroom (BIC) to improve participation rates, yet millions of low-income children do not partake in these programs. Introduction: Paediatric obesity has become a global epidemic with many countries developing strategies to help tackle its prevalence. School based physical activity (PA) and nutrition interventions have proven to play a promising role in tackling childhood obesity.
Background: Project Spraoi is an Irish primary school based intervention. The intervention was delivered to an intervention school to help enhance PA and nutritional behaviour amongst pupils. The intervention school was assigned an 'Energizer'; a trained PA and nutrition change agent who worked with the school to achieve the objectives. For evaluation purposes a control school was recruited.

Childhood obesity rates have increased nationwide, but rates of childhood obesity are higher in Tennessee (TN). The Coordinated School Health (CSH) Program is a multicomponent approach designed to improve academics and health in children in Tennessee; however, researchers have not evaluated the 8 components of the plan and the impact it has on weight in children. School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. While many researchers have studied school gardens, few have compared two countries, focused on environmental sustainability, or investigated Maine in particular. School garden-based education programs have become an increasingly popular tool to improve children's nutrition, yet evaluations have found mixed results. This study analyzes three years of student surveys collected before and after one year of participation in the American Heart Association's Teaching Gardens program. Analysis was guided by the Social Cognitive Theory, and measured changes in determinants of healthy eating behavior: preferences for fruits and vegetables, gardening skills, food systems learning, and perceptions of self-efficacy and social norms regarding fruit and vegetable consumption. A total of 755 pre-test and 976 post-test responses were included in the analysis, as well as …
