In order to better assist practitioners and better serve persons with autism spectrum disorders (ASD) and their families, it is vital for professionals to systematically evaluate the existing body of literature and synthesize its scientific evidence, so that the efficacy of research can be translated to evidence-based practices (EBPs) (Wheeler, 2007; Zhang & Wheeler, 2011). This research synthesis evaluated adherence to EBP standards and analyzed the effectiveness of gluten-free and casein-free (GFCF) diets for individuals with ASD. Four hundred and seventy articles were screened among peer-reviewed journals in English language published through 2010 using the Academic Search Complete search database. …

Blended-design courses integrate both face-to-face and online learning. This thesis discusses the use of three teaching innovations and their effect on student engagement and course satisfaction in a blended-design nutrition course. The three teaching innovations include 1) a web-based learning platform, called Connect (published by McGraw-Hill Education) 2) other easily accessible technological tools (such as Google+), and 3) higher-level use of a graduate-level teaching assistant.

Another form of web-based learning platform, Mastering, published by Pearson Education, was use previously in the course. However, students, especially those earning the highest grades in the course, did not see value in completing these …

Our goal with the present proposal is to bring modifications to the dining experience in Kimball Hall at the College of the Holy Cross, so to encourage a more well-rounded approach, which would best represent the values of continuous learning and education of the whole person and reflect the mission of the College. In order to meet these goals, we recommend five changes to Kimball dining , which we plan to implement during the Spring 2017 semester in collaboration with two Montserrat seminars.

Changing demographics in the United States to a minority-majority culture require health care professionals who are culturally competent to provide appropriate care to patients. In a university in the Mid-Atlantic region of the United States, a gap existed between student education and the culturally competent professional practice of entry-level registered dietitians. Using Freire's notion of social justice and Vygotsky's constructivist theory as the conceptual frameworks, the purpose of this study was to explore educators' instructional strategies that promoted cultural competence in nutrition and dietetics education. Preschool-age children have the potential to be influenced by their physical home environment and their parents’ physical activity (PA) practices more than older children as preschool-age children are more reliant on parents for PA opportunities. Previous research with this focus has relied predominantly on various subjective assessments of child activity, often resulting in overestimation of PA and underestimation of sedentary time (ST).
