Nearly 13 million children and adolescents are considered to be obese in the United States, with children enrolled in Clark County School District showing elevated overweight and obese weight statuses compared to national averages. Carrying an excessive amount of weight can lead children to experience a multitude of complications with their physical and mental health as well as increase their risk of developing various chronic diseases. In the United States obesity has become a major public health issue. Over the past two decades, the prevalence of obesity has doubled in adults and children. In the city of Richmond, California, adults and children are experiencing the highest rates of obesity and obesity-related diseases in comparison to other residents of West Contra Costa County. In an effort to reduce the rates of obesity in Richmond, two non-profit organizations have partnered up to provide innovative community-based health education to combat obesity and type II diabetes.

Due to their limited resources, rural, older adults in the United States are at risk for poor diet-related health outcomes. Nutrition education is a key component in improving health outcomes in older adults. Cooking Healthy, Eating Smart (CHES) is a nine-lesson curriculum designed to teach rural, older adults culturally appropriate nutrition and food safety information. Funding to hire health professionals to deliver such a curriculum is limited, presenting the need to explore a less expensive mode of dissemination. Schools possess a unique opportunity to reach a large captive audience and are becoming one of the battlegrounds for childhood obesity. To address the school environment’s role on the influence of American children’s nutritional intake and participation in physical activity, the United States (US) Federal Government adopted the Healthy, Hunger-Free Kids Act of 2010, placing an emphasis on implementation of the local school wellness policy (LSW). Vitamin D deficiency is considered to be a pandemic with implications for compromised bone health and other chronic diseases. Few studies have examined vitamin D status in college-aged individuals where prevention of future health consequences is still possible. Serum vitamin D 25(OH)D status and vitamin D intake were examined in 98 college students ages 18-29 years during winter. BMI was classified as < 25and 25 or greater. Race was categorized as Caucasian or other. Overall, 69.5% had suboptimal serum vitamin D levels, <30ng/mL. Only 8 students (8.2%) met the EAR (400 IU) per day for vitamin D intake. t tests were used to determine if there were significant differences in serum vitamin D level and dietary intake based on gender, race and BMI. Significant differences were found in serum vitamin D level when compared by gender and race. Females tended to have a higher serum vitamin D level than males. Those representing minorities had lower serum vitamin D levels than Caucasians; One hundred percent of the minority students had suboptimal serum vitamin D levels. Based on these findings, dietitians should increase efforts to target college-aged individuals in educational programming related to factors affecting vitamin D synthesis, vitamin D intake, and health consequences of suboptimal vitamin D status, particularly in winter. Consideration should be given to vitamin D fortification of foods that meet the preferences of today’s consumer.

The purpose of this study was to determine if three elementary school garden club programs influenced students' attitudes and behaviors regarding fruit and vegetable consumption. Both quantitative and qualitative data collection and analysis took place, in the form of pretest and posttest questionnaires as well as participant interviews. Overall, non-significant results were found in the quantitative portion of the study, which led the researcher to determine that the garden club program had no significant effect on the participants regarding perceptions of fruit and vegetable consumption. Peer teaching is a promising model of health education. Limited research exists on the topic of the effectiveness of peer health teaching, and even less research exists on the effects on the actual peer teachers, notably their motivations for becoming peer teachers as well as behavioral modifications and improved self-efficacy made as a result. The purpose of this project was to create an empowerment program for children with severe food allergy (SFA) in a residential camp setting. Despite recent advancements in research, there is no cure for SFA, thus there is a need for programs to help children manage their allergies and cope with the ramifications of their condition. Quality of life is a major concern for children with SFA, as the constant fear of exposure to an allergen can lead to high levels of anxiety. An Economic Analysis Of Sizing Constraints: Price Discrimination And Changes In Welfare Under The New York City Soda Ban, Brian A. Bourquard

This thesis uses profit maximizing techniques and nonlinear, second-degree price discrimination theory to describe changes in consumption and gains and losses in welfare of consumption under a container size constraint. It observationally examines the New York City soda ban to provide insight into retailer behavior in the event of such a ban, and examines three cases to highlight potential retailer decisions to compensate for a ban: to continue using a restricted menu of pricing options; to sell only to high type soda consumers; or to serve both markets with a one-size-fits-all strategy. The Adolescent Girls Empowerment Program (AGEP) in rural and urban Zambia aims to build social, health, and economic assets of adolescent girls. A safe spaces component is at the core of AGEP. Girls groups, under the guidance of a female mentor from the same community, provide a safe and supportive learning environment. The meetings are critical in building social assets for vulnerable girls—including friendships, self-esteem, trusting relationships with adults, and social support.
