“Our infant mortality rate is a national embarrassment.”1 The words seem shocking and harsh across the headline of a 2014 Washington Post article. The thought of America not only not being the best at something, but falling upsettingly behind, is a foreign concept to many who view America as a nation inferior to none. However, the statistics on infant mortality rate tell the stark truth that of 26 “wealthy” countries, the U.S. ranks last, with a sobering 6.1 deaths per 1,000 live infant births.2

Preferences And Nutrient Composition: The Impact Of Flour Types On Battered Fried Food, Lobat Siahmakoun

This study investigated the impact of different flour-batter types on protein rich food in regard to people’s overall liking and sensory preferences (saltiness, flavor, texture, moisture, and color). In addition, all battered fried chicken, fish, shrimp, pork, and beef were analyzed for fat, calories, and protein content in the Central Analytical Laboratory at the University of Arkansas. Two hundred thirty-five participants completed the questionnaire containing five major sections. Respondents evaluated samples of battered fried chicken, fish, shrimp, pork, and beef using all-purpose flour (APF), rice-flour (RF), and potato flour (PF). The two articles presented in this thesis used both quantitative and qualitative research methods to evaluate competencies among agricultural business students and agricultural sales professionals respectively. In the first study, students enrolled in the Fall 2014 agribusiness sales course at [State] University (n = 97), participated in a pre and post evaluation comprised of leadership assessments to determine the change in introversion and extroversion, task-oriented and relationship-oriented, and finally strength characteristics over the time period of an academic semester. Higher levels of physical activity requires increased fluid intake due to increased water losses via sweating. PURPOSE: To determine the effect of physical activity on hydration status and water intake. METHODS: This study involved 8 visits to the Human Performance Laboratory over 22 days. Body weight and urine measurements were taken every visit. Physical activity was assessed by the International Physical Activity Questionnaire (IPAQ), water intake by the Water Frequency Questionnaire (WFQ), and hydration status by urine osmolality (UOsm), urine specific gravity (USG), and urine color (UC).
