Perceived Benefits And Barriers To Livestock Mortality Composting, Rachel Wieme, Lynne Carpenter-Boggs

The Journal of Extension

We conducted webinars in 2020 about livestock mortality composting (LMC). Forty-five attendees completed a survey to evaluate the webinar and help define future educational needs. Major barriers to LMC were lack of experience, public and neighbor perceptions, and environmental management. Most respondents indicated convenience, cost, biosafety, use of product, and environmental management as benefits. An unexpected emotional theme indicated that LMC also supports the “circle of life” and “respect for the animal.” We propose that this theme may be a uniting message to improve public and producer perception of LMC, increase use of LMC, and improve public-producer relationships overall.

An Evaluation Of A Cooperative Extension Internship Program, Lisa Ellis Mccormick, Karen A. Vines, Subrato Kumar Kuri

The Journal of Extension

The purpose of this project was to evaluate the Virginia Cooperative Extension internship program from the perspective of student participants and their supervisors. Three focus groups were conducted with internship supervisors from the summer of 2019. Student survey data was used to identify concerns from the student perspective to inform the supervisor focus group questions. In addition to the questions, a Strengths, Weaknesses, Opportunities, and Threats (SWOT) analysis was also used to collect qualitative data within the supervisor focus groups. Findings suggest areas of strength that can be used in marketing as well as opportunities for program improvement.

The Journal of Extension

The Choose Health Action Teens (CHAT) program of Cornell Cooperative Extension engages teens to teach a nutrition curriculum to younger youth, with the goal of enhancing the leadership skills and health behaviors of the teen teachers. Due to COVID-19, an in-person CHAT program in New York City was converted to virtual and implemented online during Summer 2020. Twelve teens, mentored by eight college interns, taught youth virtually in their homes. Quantitative and qualitative assessments demonstrated improvement in teen leadership and facilitation skills and health behaviors, and suggest that converting this type of programming to a virtual environment can be successful.

An Exploration Of Learning And Teaching Methods In Agricultural Extension, Jeremy Levinson, Dave Lamie, Michael Vassalos, Chris Eck, Juang Chong, Francis P. F. Reay-Jones

Abstract

The Train-the-Trainer approach is widely used in Cooperative Extension education to efficiently disseminate research-based information to many clientele groups, including farmers. This paper compares the traditional Train-the-Trainer model to a comprehensive Collaborative Train-the-Trainer model and discusses weaknesses of the traditional model that are addressed in the Collaborative model. Sources of information used by farmers (growers) and overall effectiveness were measured through a survey instrument created and distributed to farmers in South and North Carolina. The Collaborative Train-the-Trainer model, which emphasizes peer-to-peer interaction and feedback loops, represents an enhanced approach for conceptualizing and implementing Extension educational programs.

Expanded Food And Nutrition Education Program Generates Economic Value Through Body Mass Index Improvement: A Cost-Benefit Analysis, Andrea Leschewski, M. Catalina Aragon, Dave Weatherspoon, Karen Barale, Garry Auld, Richard Acquah-Sarpong, Susan S. Baker

Prior economic evaluations of the Expanded Food and Nutrition Education Program (EFNEP) perform cost-benefit analyses (CBA) reliant on self-reported behavioral data and unvalidated criteria for disease prevention. This study aims to conduct a CBA of Colorado and Washington EFNEP using an objective biomarker, Body Mass Index, to monetize program benefits. A longitudinal study of a convenience sample of EFNEP participants was conducted utilizing a single-group pretest-posttest design. Results indicate Colorado and Washington EFNEP generates $9.23 of benefits per $1.00 of costs and demonstrate the feasibility and value of using biomarkers in economic evaluations of nutrition education interventions delivered through Extension.

Resource constraints have lowered the number of collegiate livestock judging teams, dropping the number of opportunities for collegiate judging, even though interest among students remains high. These opportunities can be provided for less expense through student-led extracurricular organizations. This approach increases the student initiative required, but also provides an increased opportunity for developing and demonstrating leadership skills.

Honey bees (Apis mellifera L.) are critical to the pollination of many crops. Bee-oriented organizations survey beekeepers annually to gather information about colony loss and contributing factors. Unfortunately, these surveys provide insufficient data from sideliner and commercial beekeepers in Georgia. Through a survey to better understand South Georgia beekeepers’ perceptions of honey bee health, this project engaged a previously underrepresented group of sideliner and commercial beekeepers.

The number of small-scale and backyard operations has increased in the United States during the past decade, but there is currently a lack of outreach efforts and readily-available educational materials targeting these farming systems. We developed a webinar series on biosecurity to provide training for small-scale and backyard producers, and training tools that can be used by local veterinarians and extension educators to disseminate knowledge and consistent recommendations more effectively. Fewer people attended the webinars than registered, suggesting a gap between interest in biosecurity and commitment to the topic. Revisiting The Master Food Volunteer Program: Examining How To Enhance Nutrition Education In The United States, Stacey Viera, Lindsey Haynes-Maslow

America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Survey results (n = 3,748) collected over a period of 7 years from the Texas A&M Beef Cattle Short Course (BCSC) were analyzed to evaluate course demographics and the impact of the course on attendees. Results of this survey demonstrate that attendee demographics of the BCSC are representative of beef cattle producers in the United States and that the BCSC is effective at delivering information that positively impacts beef production in Texas. Extension professionals can make use of these findings to tailor future education programs to better serve the needs of beef cattle producers nation-wide.

Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.

Forest landowners are an important target audience for many state Extension programs. Acknowledging the differences and associations between landownership values, characteristics, and educational preferences of forest landowners should lead to improvement of educational programs and ensuring that educational needs are being met. Through an internet-based survey of forest landowners four distinct landowner typologies were identified based on respondents’ reason for owning forestland. Results also identified the educational needs and barriers to meeting these needs for the landowners. Creating typologies based on attitudinal responses will allow for a more focused approach to developing educational products and services to meet landowner needs.

Hardened structures, such as bulkheads and seawalls, are currently the primary choice of shoreline protection for waterfront property owners. However, hardened shorelines are known to enhance erosion and often promote the loss of intertidal habitat. Living shorelines are a collection of environmentally friendly construction techniques that serve as an alternative to hardened shorelines through the incorporation of natural materials, such as native plants. Misconceptions regarding agricultural careers are exacerbated by increasing urbanization and are one of many differences in perspective between urban and rural communities. The One Georgia 4-H Urban-Rural Experience addresses this divide through a statewide youth exchange focusing on the agricultural sector. The program includes a multifaceted look at agricultural careers through visits to urban and rural communities. Focus group evaluations revealed the impact on youth through exposure to new careers, increased understanding of the diversity of agriculture, awareness of the interconnected nature of urban and rural communities, and a sense of belonging to a diverse group of youth.

We used an online survey to document challenges experienced by aquaponic hobbyists (n = 81), producers (n = 117), and educators (n = 75). Responses were distilled into the following categories: 1) operations and management; 2) facilities, location, and system design; 3) knowledge and educational resources; 4) funding; 5) economic viability; 6) plant culture; 7) marketing and distribution; 8) fish culture; 9) human factors; 10) regulations and certifications. Training and research in these areas are needed to advance the aquaponics industry.

Virginia Cooperative Extension (VCE) educators are uniquely positioned to support the food recovery organizations (FROs) which address hunger-related needs resulting from food insecurity. Based on an online survey to measure how VCE educators have engaged with FROs and their experiences, respondents who previously supported FROs did so across multiple programming areas, and those who had not indicated an interest while also experiencing barriers. Respondents also reported the need for context- and audience-specific resources particular to the spectrum of food recovery. Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Competitive events represent a major component of 4-H programming. These events are typically held in person; however, unforeseen circumstances, like the COVID-19 pandemic, have required Extension professionals to adapt these programs to virtual settings. This paper outlines some unique features of Qualtrics, a web-based tool commonly used to build surveys, that led Missouri 4-H to use the platform to administer agriculture and natural resource science contests.

The Extension Service is one of many agencies charged with increasing awareness and knowledge of research-based agricultural conservation practices. A regional survey of Extension agents with agriculture and natural resources responsibilities was conducted to assess the need for in-service training on 11 water resource conservation topics. The highest priority training needs were for topics related to complex interactions and drivers of agricultural water pollution. This article highlights the implications of these results and offers broader perspective on bringing the Borich model of needs assessment into the agricultural and natural resources realm of subject matter expertise.

During the 2017 annual meeting of the Western Regional Center to Enhance Food Safety, 52 representatives from 15 western states/territories, regional centers funded through USDA-NIFA Food Safety Outreach Program, federal and state government agencies, and non-governmental organizations prioritized topics for the Food Safety Modernization Act (FSMA) training materials that address region-specific agricultural production and processing systems. This article describes supplemental materials or “add-ons” developed to support FSMA-related food safety trainings. Although the materials were developed for the western region stakeholders, they can be applied or adapted to other regions in or outside the U.S. to enhance food safety trainings.

Extension can play a key role in providing food waste education nation-wide. This study is the first to evaluate the effects of environmentally focused lesson plans on elementary student knowledge and perceptions regarding food waste. Herein we provide suggestions on concepts to teach students for the greatest impact on food waste reduction. We also provide avenues to incorporate food waste education into existing Extension programming. We hope the study can inspire and inform further food waste program development, assessment, and implementation through Extension.

Understanding relationships between demographic and economic factors and equestrian participation could improve horse program design. We implemented an online survey that characterized associations of participation in equine activities, socioeconomic factors, and economic factors with age. Seventy-five percent of respondents ride, and 34% are recreational, non-competitive participants. Respondents were mostly female, and many participate in the sport throughout life. Many respondents indicated they overspent on equestrian activities. Horse programs should incorporate information and activities that address issues unique to females, should develop skills required by amateur or recreational riders, and should incorporate information on financial wellness.

Nonnative pests and pathogens severely affect forest health and are often spread in firewood. Our objectives were to create an extension education program using “Don’t Move Firewood”-themed geocaches and travel bugs which were placed near campgrounds across Mississippi, and to assess the efficiency and effectiveness of this outreach method. Interactions with caches and travel bugs were monitored over nearly one year and summarized to provide a measure of outreach success. With a one-time per-unit cost of $45.95 for caches and $6.75 for travel bugs, these tools provide ongoing, cost-effective educational approaches well suited to augment existing or launch new outreach …

4-H Youth Development prides itself on providing essential resources to reach underserved minority populations. 4-H provides programming and professional development for volunteers to include diverse hands-on training, and cultural competency workshops. This article provides best practices for the inclusion of African American volunteers in 4-H programming efforts that could help extension educators better understand the need to include minority volunteer roles and responsibilities. These strategies include strengthening diverse volunteer make-up, increasing participation and trust among African American youth, and engaging volunteers working in educational organizations that could provide real world experiences for youth.

Effective delivery of continuing education programs can improve their impact. Using the first of four two-week modules of a professional short course, we tested outcomes of a flipped classroom approach, comparing professional foresters’ completion rates, preference for, and perceived value of pre-module content delivered via video and reading. Participants in the National Advanced Silviculture Program self-reported significantly higher pre-module completion rates, preference for, and perceived value of video over reading. This simple study suggests the potential for video to serve as an accessible and preferred format for delivery of key content to supplement an in-person continuing education program.

College students consume less dairy milk than in the past. Increased competition in the beverage aisle influences their choices. However, much of the population is not meeting the recommended intake guidelines for calcium. A survey of undergraduate college students with university dining plans focused on milk consumption habits, beverage choices, and student attitudes toward healthful foods and nutrition. Results are guiding Extension program educational outreach campaigns to college students. By focusing on the healthful and nutritional benefits of milk, Extension educators could increase consumption among college age consumers, and their long-term healthful outcomes.

Our study examined the relationship between improved personal health behaviors of Head Start teachers’ and the promotion of positive health behaviors in their classroom. Thirty-three Head Start teachers across 7 centers received six 30-minute nutrition education lessons. Dietary intake, physical activity, and self-efficacy for promoting positive health behaviors in the classroom were measured at baseline and post-intervention. Significant improvements were observed for dietary intake and physical activity. Self-efficacy for promoting health behaviors in the classroom did not significantly improve. Additional education is needed to improve health promotion practices. Lessons learned contributed to program refinement. Implications for Extension are discussed.

The need for young leadership in the beef industry has become a rising concern as the average age of primary operators increases. Extension educators developed a leadership conference for beef producers with the primary objective to educate and develop leadership qualities in young cattle producers. To achieve the objective participants, age 18-40 years old, had opportunities to learn all aspects of the industry through presentations, hands-on learning and industry tours.
