The goal is to improve health and nutrition among new mothers and their children who were living in shelters. The mothers received workshops and booklets consisting of information, quick and healthy recipes, and learned how to prepare home-made meals with a low budget. The mothers realized nutritious foods are important for them and their children. They learned how to manage time to make nutritious food at the residence. U.S. culture values hard work, no excuses mantras, and discipline to achieve a graduate degree or the next promotion, and often it is a badge of honor to be overcommitted, stressed out, and exhausted. Higher education as a baby boomer brings mental, physical, and economic adjustments, concerns, and insecurities. Additionally, life delivers unexpected challenges and barriers which can cause hardships requiring various types of motivation. Fortunately, there are also catalysts which can contribute toward successes. Literature from four major elements were the focus in this study: motivation, adult learning, challenges, barriers, and catalysts. The purpose of this mixed method study was to explore the transition to an online educational platform for future health professional students at a southern health sciences system due to Severe Acute Respiratory Syndrome (SARS-CoV-2) virus. The majority of health professional students received their education via face-to-face prior to the pandemic. Throughout the semester we explored various aspects of living a healthy lifestyle, we started in the topic of MyPlate and introduced the five food groups, touched on other elements of a healthy life (such as exercise, sleep, and the nine dimensions of wellness). Towards the end of the semester, we incorporated cooking lessons that taught the students safe kitchen habits and where their food comes from. We tried to incorporate physical activity, visual, audio, and hands-on elements into each club meeting.

The FOCUUS Model or Facilitating Occupational Performance on Campus: Uplifting Underrepresented Students, is a theoretically-based, evidence-centered model focused on ethnic minority (EM) students in higher education. The FOCUUS Model recognizes minority status as a determinant of health, where the experience of minority status stress (MSS) resulting from racism, stigmatization, marginalization, discrimination, microaggressions, and challenges to one’s sense of belonging largely influence one’s occupational performance, health, and overall well-being. The purpose of this qualitative, narrative inquiry study was to explore the influence of educational attainment on Black women’s perceptions of their health. Empirical research indicates the causes of stress and other health concerns pertaining to Black women are often rooted in racism and discrimination. Higher Education Institutions (HEIs) are potent health promotion settings, uniquely positioned to aid societal efforts to combat non-communicable diseases (NCDs). International evidence suggests that health metrics and lifestyle behaviours of higher education students are sub-optimal, yet a dearth of contemporary Irish data exists. This study aimed to examine sex differences in student lifestyle behaviours and identify significant predictors of positive mental health in an Irish HEI setting. An online questionnaire instrument distributed to all registered students (n = 11,261) gathered data regarding a multitude of health and lifestyle domains. The purpose of this study is to further expand the understanding of how Hispanic college students’ life styles influence their health. The research design employed a cross-sectional survey approach utilizing the purposive sample of 116 Hispanic undergraduate students (62 men, 54 women, all lived in the dormitory during the semester) at a university in Texas. The results indicated that there is a significant difference between Hispanic male and female college students in their life styles. Over the past two decades NH and Maine have experienced rapid growth of racial, ethnic, and linguistic minority populations. New Hampshire’s foreign-born population was 5.7% in 2013, while Maine’s foreign-born population was 3.4% during the same time period (American Immigration Council, 2017). In addition, NH and Maine are designated refugee resettlement areas. NH is now home to refugees from over 40 countries (NH DHHS, 2010) and Maine is home to refugees from over 30 countries (Catholic Charities Refugee and Immigration Services, 2015).

This honors thesis is a part of a larger ISAT Senior Capstone project with partner Rachel Stukenborg. The purpose of the collaborative ISAT Capstone Project was to develop a set of university-level teaching and learning resources about energy poverty that incorporate a spherical display system, Science On a Sphere (S.O.S.). Four lesson “packages” were created regarding energy poverty for the ISAT Capstone. The first three incorporate Science On a Sphere while the fourth delves into the social, political, economic and cultural dynamics of sustainable solutions, without S.O.S. images.
